Were making our chicken noodle soup creamy with a cornstarch slurry. Its made of heavy cream and cornstarch. Just whisk those two together until smooth, then mix that into your soup at the end.

How to store:

Leftover chicken noodle soup will last in an airtight container in the fridge for 3-5 days. Keep in mind that the pasta will soak up the liquid and soften as the soup sits. Leftovers will still taste delicious though!

How to freeze:

If youre going to freeze your soup, I recommend doing so without the pasta. Cooked noodles can become mushy in the freezer. To freeze your soup, follow the recipe as instructed, but dont add the pasta. Instead, cool the soup completely, then store it in the freezer. When youre ready to enjoy, thaw the soup and add cooked pasta just before serving.

Type Of Noodles To Use

You can use any type of pasta for chicken noodle soup. However, wide egg noodles are a popular choice because theyre thin and have more surface area, so it cooks quickly in the simmering chicken stock.

I recommend using about 4 cups of dried pasta to 8 cups of liquid. Any more and the pasta will absorb too much moisture, not leaving much broth. Other noodle options include ditalini, rotini, or thin spaghetti broken up into short strands.

How To Quick Release Instant Pot

When making this Instant Pot Chicken noodle soup, youll use a quick release to stop the cooking so the chicken doesnt overcook. When the cycle ends, just turn the venting knob to vent to release the steam.

Always protect your hand with an oven mitt or kitchen towel to prevent burns as the steam is very hot. Quick release will make the pressure drop in seconds instead of minutes. Once released, the lid will easily open. Never force the lid off your Instant Pot if it doesnt open easily, it is still under pressure and should not be opened!

You really can use any noodles you like! However, most chicken noodle soups are made with egg noodles.

If you want to go all-out, you can make absolutely everything from scratch with homemade egg noodles.

I usually stick with store-bought egg noodles. However, when someones sick, I use whatever I have on hand, including ditalini, shells, or orzo.

If I had to choose my favorite though and money was no object I might say that dark meat would be my fave. Adding a lot more flavor to the overall dish just with brown vs. white meat its kinda a game changer. You can usually find them cheaper with bone-in, and I just cut the meat off beforehand and dice.

However, if youre short on time, you can use store-bought, canned chicken broth. This quick substitute is still MUCH better than any canned chicken soup you can buy, and it will be ready to eat in less than 30 minutes!

Make sure to saute the celery, carrots, onions, and garlic before adding the chicken broth. Use a spoon to scrape the bottom of the pan to ensure that all the flavor is incorporated into the broth.

How To Make Chicken Noodle Soup In The Instant Pot

The secret to good chicken noodle soup is to make the broth from scratch using chicken with skin and bones. My mom always made her soup with a whole chicken, lots of carrots, onion, celery and sometimes a parsnip for more flavor. The end result is always the best and tastiest broth and my favorite part was always the noodles. Oodles of noodles, the more the better.

This Instant Pot chicken noodle soup is similar but it takes a lot less time and the soup is just as incredible, loaded with tons of flavor.

I did not use a whole chicken, its not necessary, but youll need about 2 lbs of chicken with skin and bones. You will want at least one chicken breast, so that you have some to shred after to add back to the soup. The biggest advantage of using the Instant Pot to make this soup is of course time. It takes 7 minutes to cook the chicken for that delicious broth.

Someone asked me if the food cooked in the Instant Pot is bland and I think the exact opposite is the truth. I find the flavors richer and much deeper. When you open that lid after cooking and the aromas hit your nose, you wont be able to wait till you have a taste of this soup.

One thing to note is I didnt cook the noodles with the chicken on the soup cycle and that is because I didnt want to end up with mushy noodles, noodles cook quick anyway, so I didnt think its necessary.

Im guessing this will be the new most frequently made version of chicken noodle soup it at my house. Its just that good!

The Instant Pot gives you that homestyle flavor and fully tender chicken. .

The cook time here really is only about 20 minutes but theres also the 10 minutes it takes for the Instant Pot to come up to pressure and the 10 minutes to release pressure.

Even if you dont normally cook with chicken thighs definitely give them a chance here.

They add great flavor, they wont overcook here, they become perfectly tender, and the bones in them also great flavor.

But skip the skin, like I mention in the recipe, it doesnt have much to offer anyway unless its browned.

If you want more of an Asian flare you could use Pho noodles more similar to our Instant Pot ramen recipe. We are always trying to eat as healthy as possible and I will say that having Instant Pot recipes on hand really helped with that!

I can buy lots of fresh produce and brown my meat right inside the pot. Its a great meal cooks usually in less than 10 minutes. This is ideal for our busy family and this homemade chicken noodle soup is definitely one of our favorites.

Our Instant Pot chicken stew is similar to this but creamy and with potatoes.

How To Make A Thick Or Creamy Chicken Noodle Soup

If you want a creamy chicken noodle soup, add 1/2 cup half-and-half or heavy cream. Stir to combine, and add more as desired.

For a thick chicken soup that sticks to your spoon, make a cornstarch slurry using 1 tablespoon cornstarch mixed with 1 tablespoon water. Select Saute and add to the cooking pot and stir until soup thickens, about 1 minute.

Keep in mind that it will continue to thicken as it cools however, if you want it thicker, add more cornstarch slurry until it reaches desired consistency.

When my kids are sick, I dont thicken it. But if Im serving it for dinner in a bread bowl, I prefer it thickened with cornstarch.

  • Cook the veggies: Turn on your Instant Pots sauté setting and heat up the oil. Add the onion, carrots, and celery. Cook for about 3 minutes, or until the veggie soften. Season with salt and pepper.
  • Cook the chicken: Pour in the chicken broth, then add the halved lemon, chicken breasts, and 4 cups of water. Close the lid, and cook for 7 minutes on the soup setting.

    In this recipe, the Instant Pot cooks the chicken and veggies under pressure however it is used to boil the pasta using the saute setting at the end. While the noodles could be cooked under pressure in this recipe, the chicken and noodles need different cook times and the Instant Pot takes a lot of time to come up to pressure.

    How To Freeze Chicken Noodle Soup

    Freezing chicken noodle soup is super simple. Make the soup as written in the recipe card, but DO NOT add the noodles. Your noodles will get soggy if you try and freeze/thaw them.

    For best results, if youre going to freeze this soup, DO NOT ADD NOODLES.

    One thing we like to do if I know well be having leftovers, is I stop when I get to step 3 above. I cook my noodles separately in a pot of water on the stove. Then we serve our noodles in a bowl and ladle the warm chicken soup over the noodles.

    If freezing, pour cooled soup into a ziploc freezer bag, or freezer safe container. Freeze for up to 3 months.
