I generally prefer using short pastas, such as rotini, penne, macaroni, and farfalle.; I often use small pasta, like ditalini, in soup.;

Dont use itty bitty pasta shapes, like orzo or those little pastina stars.;

I have used longer pastas, like spaghetti and fettucine.; While these can work well, they are more likely to clump together when cooking.;

If youre going to use long noodles, I suggest breaking them in half first and adding a little bit of oil to the water so they arent as likely to stick together.

I wrote separate instructions for how to cook tortellini in the Instant Pot and how to cook frozen ravioli in the Instant Pot, because both of those are a little bit different than plain, dried pasta.

And although gnocchi isnt technically a pasta, it sort of falls under the same umbrella, so Ill include it here as a variety Ive cooked in the Instant Pot !;

Since tortellini and gnocchi arent as dry as the typical boxed pasta, they cook a little bit faster .

Releasing Pressure After Cooking

Once the cook time is complete, you have a couple of different options for releasing the pressure.; I generally dont recommend using a natural release in this instance, because the pasta will continue to cook and soften even more, potentially becoming mushy.

You can allow a natural release for about 5 minutes, followed by a quick release .

Or, you can perform an intermittent release of pressure.; To do this, youll quickly open the vent to release some steam.; If starchy water or large drops of water come out , close the vent again and wait about 30 seconds.;

Then, follow the same steps until only steam is coming out , at which point you can allow the pressure to fully release.

Usually, it only takes one or two times of switching the vent back and forth to accomplish this.

Instead of an intermittent release, you can also do a slow release.; In this case, you only open the vent ever so slightly, so the pressure is releasing more slowly.

After the pressure has released and the valve has dropped, carefully open the lid and drain the pasta.

How To Reduce Foam When Making Pasta In The Instant Pot

You know how when youre boiling pasta on the stove top, youll see a foamy bunch of bubbles forming at the top of your pot?; Often this is what bubbles over and makes a mess.

Well, the same thing happens even when youre cooking pasta in the Instant Pot.; This is because starchy foods tend to foam when theyre cooking.

Ordinarily, when youre pressure cooking starchy foods, I recommend doing a natural release of pressure to allow the foam to subside.; But because pasta can so easily become overcooked, the natural release isnt the best choice.

This is why I tend to recommend using the intermittent release or slow release in many cases.

However, you can also add a little bit of fat to the water before cooking, which helps to decrease the foaming.; Adding a pat of butter or a bit of oil can be useful in this instance.;

    Creamy Orzo pasta with Mushroom and Peas | Instant pot pasta recipe | ASMR Cooking

    Cooking plain pasta in the Instant Pot is as simple as adding your dry pasta, water, and kosher salt to the pot, pushing a button, and then walking away until its done!

    NO stirring so the pasta doesnt stick, NO watching to make sure it doesnt boil over, and NO constantly checking to see if its perfectly al dente yet In fact, you dont even have to drain the pasta when its done, since most of the water is absorbed during the pressure cooking process.

    1| Add the dry pasta, water, and kosher salt to the Instant Pot insert. Dont stir the ingredients. Just place the lid on top and turn the steam release knob to sealing.

    2| Use the Manual Pressure function to cook the pasta on high pressure for 5 minutes. The Instant Pot will take about 11-12 minutes to come to pressure before the actual cooking time begins.

    3| When the cook time is up, perform a quick release. The pasta is ready to serve!

    Here Are Some Quick Tips

    Tip: Make sure that all the ingredients are prepped and ready before you start cooking. It will help make cooking go smoothly .

    Another tip: Its much easier to zest first before squeezing the juice out of the lemon. I use a microplane grater/zester to zest the yellow peel off the fruit before using a mini citrus juicer to get as much juice as I can out of the lemon.

    • You can also use the smallest sized hole on a box grater or a vegetable peeler to peel the yellow skin and then finely chop the skin into tiny pieces using a sharp knife.
    • Try not to get any of the pith when you zest as it is bitter and unappetizing.

    Instant Pot Garlic Chicken Sausage Orzo

    This is a perfect summer supper made easy by your Instant Pot. I had a couple of friends over while I was cooking yesterday and they both agreed that they wanted to make this orzo dish for their own families! I told them the recipe would be on my website today. So Mindy and Katiehere it is!

    I love the tanginess from the balsamic vinegar, the slight crispness from the zucchini and peppers, and the flavor that comes from the chicken sausage. I found my chicken sausage on sale a couple of weeks ago at Smiths . It has great flavor and it really makes dinner easy. No browning, pre-cooking or thawing. Its just ready to go. If you cant find chicken sausage you can totally just use a regular smoked sausage of your choice.

    I chose to use whole wheat orzo pasta. I was so excited to find it at my grocery store. Ive been looking for whole wheat orzo for a long time! It was the Delallo brand and well worth the extra cost. You can also use white orzo. Keep the recipe times/ratios the same.

    The veggies are tender so I did not pressure cook them. Even with a 1 minute pressure cook time the zucchini and peppers would be indistinguishable. So instead I chopped them up while the pasta was cooking and stirred them into the hot pasta after it was done pressure cooking. I covered the pot for just a few minutes afterwards and the hot pasta cooked the tender veggies.

    How Long Should Orzo Cook In A Pressure Cooker

    The greatest risk when cooking pasta in a pressure cooker is overcooking the noodles. If the pasta turns to mush, dinner is ruined.

    I find the 2 minutes on high pressure with a quick releaseis the best cook time for Instant Pot orzo.

    After 2 minutes, the pasta is still al dente but will continue absorbing any remaining water in the pot and continue cooking in the residual heat. Let the pasta sit for 3 to 5 minutes with the lid loosely covering the Instant Pot, until the orzo has the texture you want.

    Using this method, rather than cooking orzo slightly longer in the Instant Pot, insures that it won’t overcook.
