Instant Pot Brisket Recipe – How To Cook Beef Brisket In The Instant Pot – So Tender And Juicy!

Carefully place cooked brisket on a chopping board and let it rest.

If you think the sauce is too oily, now is a good time to use a fat separator to remove the oil.

Bring the BBQ sauce back to a simmer by pressing the Cancel button, then Saute button.

Mix in 1 cup ketchup, 2 tbsp Dijon mustard, and 1 tbsp brown sugar in Instant Pot.

Let the BBQ sauce thicken by simmering for 8 15 minutes. Stir occasionally.

Taste and adjust the seasoning with more salt if necessary.

  • It is possible to overcook brisket, so many sure you dont leave it in the Instant Pot for too long. A longer cooking time can sometimes make the beef lose its flavor, so longer doesnt necessarily mean a tastier dinner. By following the instructions below, youll make the perfect Instant Pot beef brisket each and every time.
  • If you cant fit all of the brisket into your pressure cooker, cut the brisket in half and place the pieces side by side instead of stacking them on top of each other. This will ensure they all cook evenly in the Instant Pot.

Make This Ahead Of Time

Slow cooker or Instant Pot brisket can not only be made the day ahead of time and reheated, some might argue that its actually better that way. After it cools, I put the entire slow cooker or Instant Pot base right in the refrigerator. The next day, you will be able to easily remove the fat that has hardened. This is also a good time to slice against the grain if youre going to do so because the meat is easier to cut cold. To reheat, add the brisket back into the slow cooker or Instant Pot and reheat on the warm setting. If youre using a Crock-Pot brand of slow cooker, did you know that the base is oven safe? Yup, you can pop the entire base in the oven for temperatures up to 400 degrees.

Fitting Brisket In Your Pressure Cooker

Instant Pot Brisket (Pressure Cooker Brisket)

How much brisket fits what size pressure cooker? A lot of that depends on the shape of your particular cut of meat.

Flat cut brisket is usually rectangular, but its not always exact. Both of the pictured cuts of brisket are around 3 pounds, but theyre quite different in shape.

Most 3 pound cuts should fit in a 6-quart pressure cooker without any issue.

You may have to cut the brisket in half to fit it in the cooking pot. If this happens, try to fit the pieces side by side rather than stacking one on top of the other.

You can fit larger briskets but be sure to test this out before cooking. If the brisket doesnt fit across the bottom of the pot, you can cut the brisket into pieces. This will work great for sandwiches or BBQ Beef Brisket Tacos .

As always, larger pressure cookers will be able to fit larger cuts of meat. However, keep in mind that youll need to add more liquid.

How To Store Leftover Cooked Brisket

Place any leftovers in an air-tight container and make sure to spoon any remaining sauce over top of the meat to keep it moist.

The brisket can be kept in the refrigerator for up to a week or two stored like this.

If you prefer to freeze the leftovers, keep brisket and sauce separate.

Wrap the brisket in plastic wrap or place in a plastic sealable bag and then place in an air-tight container to prevent freezer burn.

The sauce can be stored in a separate air-tight container in the freezer. Thaw both in the refrigerator before reheating.

How To Choose A Brisket

You may see a couple of different brisket options available at your grocery store. There are two cuts of brisket, which are the point and the flat. The point is a rounder piece of meat that has a fat cap and is often more tender. The flat is a leaner cut that is more of a rectangle in shape. Often times in restaurants when you see those nice even slices of brisket, that is the flat cut. Either cut will work just fine for this recipe, its just a matter of preference whether you want leaner meat, or meat with a little more fat in it.

Cooking Brisket In A Pressure Cooker

This recipe is simple and easy to follow, so dont be scared of the Instant Pot or pressure cooker. Here are some cooking tips:

  • Trim the fat on the brisket as much as possible. Brisket is already naturally marbled with fat within the meat.
  • Youll likely need to brown the brisket in batches. Cut it into pieces that fit the size of your pressure cooker. Or, simply brown it in a pan on the stovetop.
  • Refer to the cooking chart below if you are cooking a different sized brisket than the recipe calls for.

Can Instant Pot Brisket Be Made Ahead

Absolutely! Brisket actually tastes better the longer it sits in the flavorful sauce or cooking liquid.Store in an airtight container, covered with sauce and refrigerate for 2-3 days.

To freeze brisket, wrap it tightly with a double layer of plastic wrap and aluminum foil. Then place in a resealable plastic bag. Freeze the sauce separate in a resealable bag.Thaw in the refrigerator overnight.

Cooking Tips Instant Pot Brisket

We like the fat cap attached to our brisket because it helps protect the meat from drying during the cooking process. But you can also use one without the fat cap.

*Note: If youre not trimming the fat cap, make sure to keep the fat cap facing up when you put it in the Instant Pot Pressure Cooker.

In a glass mixing bowl, mix dry rub ingredients together.

Rub the dry rub mixture on the brisket, then let it marinate for at least 2 hours .

How To Make Instant Pot Beef Brisket

  • Your brisket will have a layer of fat on one side. I like to trip some of it off, but not all of it. The fat does add some additional flavor.
  • Mix up your rub and cover both sides of the brisket with it. If you have time, wrap the brisket in plastic wrap and allow it to sit in the refrigerator for up to 24 hours. If you dont have time, thats o.k., it will still be delicious. I have done it both ways, allowed it to refrigerate before and also just added the rub and put it in the Instant Pot and both ways were delicious.
  • Saute your garlic with the olive oil in the Instant Pot using the saute feature.
  • Cut the brisket into two pieces so that it fits in the pot.
  • Add your seasoned meat and beef broth. Pour the beef broth around the meat, not over the top, so you dont wash off the rub.
  • Cook on the meat/stew setting for 90 minutes. Do a 10 minute natural release and then a quick release.
  • Place the brisket on a cutting board. Slice the meat going against the grain. Cover with your favorite BBQ sauce.

If you dont have an Instant Pot, you can still make this delicious brisket! Just check out my slow cooker brisket recipe! It definitely takes a little more time to cook, about 7-8 hours, but it is just as delicious!

Make Sure You Pin Instant Pot Brisket

Brisket is a cut of beef that comes from the chest of the cow. Because it is a tougher cut, it is nearly always slow cooked, whether it be braised, simmered or smoked. If slow cooked properly, the connective tissue breaks down resulting in fork tender beef.

It is also known for being a large cut of beef, commonly sold in 3 and 4 pound increments. It is also a staple of Texas BBQ.

Making brisket in the Instant Pot combines the best of all these worlds. It speeds up the slow cooking process, allowing those connective tissues to dissolve in a fraction of the time.

Another way to make any meat melt-in-your-mouth is to slice it against the grain.

This literally shortens the fiber because you literally cut them. Here is a nifty picture to show how to slice against the grain.

A light bating with a meat mallet also helps to break down those fibers before cooking even starts. The simmer liquid, a quick homemade BBQ sauce, imparts flavor and also serves as the slightly sweet dressing sauce.

Prep The Brisket For Cooking

This brisket pulls together so quickly it’ll make your head spin! Season as liberally as you dare with Montreal Steak Seasoning…be sure to pat the rub on the meat so that it sticks well. Be sure to prep some delicious green beans to serve with this!

If doubling the recipe just with any other pressure cooker recipe, you will not need to increase the time. You don’t necesarily need to increase the liquid unless you would like more gravy either.

Cut an onion in half, then slice. Throw this in the Instant Pot along with three cups of water, and the Better Than Bouillon Beef Base . You can also use three regular bouillon cubes, or boxed broth.

Slide the rack that came with your Instant Pot into all this mess, and gently set your seasoned brisket on top.

Slice Across The Grain

After you remove the brisket from the Instant Pot, youll want to cover it with aluminum foil and let it rest for a good 15 minutes to 30 minutes before slicing into it. When you slice it, youll always want to be slicing it against the grain and into 1/4 inch slices. Just make sure that each piece has a good piece of that delicious seasoned bark, theres a lot of flavor there.

  • Beef Brisket Flat Brisket is often sold in portions labeled whole, point, and flat. For this recipe, were using the leaner of the 3 cuts of beef which is called the flat. Look for brisket portions labeled Brisket flat or ask the butcher to help you choose the right cut of meat for the recipe.

    I take such pride in this dish. To me, being Jewish is all about traditions, and in Jewish families, brisket is a tradition in and of itself. Were talking tender, fall- apart brisket in an incredibly simple sweet and savory sauce . But food knows no religion. In fact, a few of my non-Jewish friends now include this Brisket recipe on their Christmas and Easter tables!

    Notes: If using a 23-pound brisket, reduce the pressure cooking time to 5560 minutes. Brisket tastes even better the next day. The day or night before you wish to serve it, make the recipe and then, once sliced, transfer the brisket and the sauce to an aluminum pan and refrigerate, covered with aluminum foil, overnight. When youre ready to serve, reheat the whole pan with the foil on top in the oven for about 30 minutes at 350°F.

    Why I Love The Instant Pot For Making Brisket

    Instant Pot Brisket (Pressure Cooker Brisket)

    Dont get me wrong, cooking brisket in the Instant Pot, is sure to offend some. Most likely, die hard Texans who are likely devoted to their smokers.

    And if thats your thing, heres a great smoked beef brisket recipe to check out.

    I get it and Im not saying Instant Pot brisket is better than smoked brisket.

    Its not, but its also much quicker and just as delicious. In a different way of course.

    The Instant Pot is great for cooking brisket because:

    • It reduces a process that normally takes all day or at least multiple hours down to an hour and half cooking time.
    • Its not necessary to brown or sear the meat beforehand.
    • And my favorite, the meat and the sauce cook together at the same time.

    So, no, its not smoked BBQ Texas brisket but its a lovely middle ground of braised, savory meat with a hint of BBQ.

    Smoking A Brisket Versus Pressure Cooking A Brisket

    Youll get no argument from me, smoked Brisket is absolutely delicious.

    The downside of doing your own smoking is that you really have to plan ahead since it can take all day to smoke a huge brisket.

    Brisket is great for a special family meal or get-together but we generally arent that good at planning ahead, and truthfully neither one of us has the patience to sit around and deal with a smoker all day.

    My solution?

    Make the Brisket in a pressure cooker!

    Ive discovered I can make a pretty darn good 2 to 3-pound brisket in the pressure cooker, in a fraction of the time, it would normally take to cook a brisket in the oven, slow cooker, or smoker.
