I think this recipe is great and does not require any changes. However, below are some ideas on how you can make this pudding even more delicious.

Dried fruit is a popular addition to have in your rice pudding. Raisins, currants, cranberries, or even chopped apricots will work very nicely in this pudding. I prefer to add the dried fruit after the pudding is cooked.

    DirectionsAdd rice, water and salt into Instant Pot. Place the lid on the Instant Pot and seal shut. Close the pressure release valve. Cook on the rice setting. When cooking cycle is complete, quick release the pressure. Open the pot.

    In a small bowl, combine milk, sugar, cornstarch and vanilla and whisk well. Pour into rice and mix well. Set the pot to saute and cook for about 3-5 minutes, stirring frequently to prevent browning on the bottom of the insert.

    Well it all depends on what texture you want the rice pudding to be.

    Arborio rice or sticky rice will have an ultra creamy texture with a bite to it.

    If you are using Jasmine rice or long grain basmati rice then the pudding will be more soft textured like melt in mouth and not chewy or starchy like arborio.

    I personally like arborio for this recipe and basmati for my Indian Kheer recipe.

    Old Fashioned Rice Pudding is ultra-creamy, decadent, and perfectly spiced dessert with warm cinnamon flavor in every bite. Whether you make this for breakfast or a mid-day treat, it is my favorite.

    The Instant Pot is the perfect device to cook rice in. If you have not tried Instant Pot rice pudding you have to soon. One of my favorites.

    How To Make Rice Pudding In The Instant Pot

    STEP 1. Combine rice, water and salt in the pressure cooker and stir to combine.

    STEP 2. Lock the lid in place and set the valve on top to SEALING.

    STEP 3. Select HIGH PRESSURE and a cook time of 3 minutes. Allow to naturally release for ten minutes after the cook time ends, then do a quick release by moving the valve on top to VENTING.

    STEP 4. Open the lid and add in 1 1/2 cups of the milk and the sugar. Stir until combined.

    STEP 5. Select SAUTE and add in the eggs, remaining milk, and vanilla. Cook until the pudding begins to boil and thicken. Turn off and fold in raisins.

    PRO TIP: Cooking the eggs during the saute function makes them safe to eat!

    Serve hot, ladled into cups or bowls. Leftovers store well in the fridge for a couple of days. Reheat in the microwave or on the stove top before serving!
