I can imagine some people might be thinking, OMG, Sharon, beef tongue, SRSLY? I get it. The first time I made cow tongue for my family, one of my sons asked me Can the cow taste me as Im eating it? Awww, so funny, but no. My other son loved it and asked for seconds.

Presentation matters. I remove all the taste buds before serving. I slice the finished cow tongue and arrange the pieces as nicely as I can before serving. You will be impressed by the buttery soft and fork tender pieces of cow tongue.

Beef tongue or cow tongue is considered a delicacy in some cultures. Beef tongue slices are wonderful fried until crispy, chopped, and served in tacos . I chop up beef tongue leftovers to make sandwiches, quesadillas or fried rice. I love beef tongue because its a great source of dietary iron and zinc.

I first ate beef tongue about 18 years ago. I think it was given to us for free. Since then weve been given LOTS of beef tongues, deer tongues, elk tongues and sheep tongues for free.

Thats one of the main reasons to fall in love with wild or grass-fed tongue: its often free. FREE food thats sustainably-raised. So many folks dont want it or dont want the hassle of dealing with it.

But they dont know it can be delicious.

How To Make This Stewed Beef Tongue Recipe

Beef Tongue  Lengua Tacos  Instant Pot &  Stovetop

You can totally cook beef tongue in a Dutch oven or slow cooker, but I chose an Instant Pot pressure cooker to get that tender texture more quickly.

First, turn the Instant Pot or other pressure cooker on saute mode . Heat olive oil in the pot and then add your sofrito. After about 2 minutes, cue the best smell in the world!

Once thats starting to get soft, add the cubed beef tongue, Sazón seasoning, and 2 teaspoons of salt. When the beef tongue is slightly browned, pour in 3 cups of water and add the bay leaf, tomato sauce, diced canned tomatoes, and vinegar.

After everythings well-combined, add the lid to the Instant Pot, making sure the valve is set to SEALING, and set your cooking time to 45 minutes on high pressure.

Once the timer goes off, instantly release the pressure, add the potatoes and carrots, and set it to SAUTE for 30 minutes. Bring to a boil and let the mixture cook, stirring it occasionally, for 30 minutes or reaches an internal temperature of 160°F.

And then its done! Spoon the cooked tongue over some white rice or even some arroz con gandules for a hearty, satisfying Puerto Rican dinner.

How to make The BEST Beef Tongue Tacos in Instant Pot RED Salsa |

1 4-5 pound beef tongue2 cups beef brothoil for frying

DIRECTIONS

Remove the tongue, lay it flat if its rolled up on itself. Now, towards the back, there may be a lot of fat. I like to trim that off its optional. Score the top of the tongue slightly about 5 times. Place it in the pot, along with all the other ingredients except the oil. You want the tongue covered with the liquid. If you dont have enough, just top it off with water. I used a little less than 4 cups.

Set your pressure cooker for 40 minutes, high, with a natural release. When pressure is fully released, carefully remove the tongue to a cutting board and let it cool a bit. Once cool, slice into the skin that covers the tongue and peel it off. It comes off very easily and must be removed before eating.

Once you have the skin off, cut the tongue into about 1/4 or 1/2 inch slices. Heat oil in a skillet and brown the slices on both sides. Once all slices are browned, chop them up into bite-sized chunks. Eat.

STOVETOP

If youre cooking this on the stove, its exactly as above, but youre going to simmer for about 3 hours. At the 2 hour mark, start poking it to check for tenderness. When tender, same as above remove to cool, cut, fry, chunk, eat.

Honestly, these make the most delicious tacos. Serve with your favorite taco condiments.

  • Storage: Once it´s cold, you can keep it in the refrigerator in an airtight container for up to 3-4 days.
  • Freeze: Once it´s cool, add it to a freezer bag or an airtight container. Seal it to avoid freezer burn. You can keep it for up to 3 months. To enjoy, just thaw in the refrigerator the night before and follow the reheating instructions.
  • Reheat: You can reheat them in a skillet, use the microwave, and even the air fryer.
  • Suggested Servings: Depending on how you would like to prepare it, there are different ways to serve it.
  • If you are making tacos, use corn or flour tortillas, salsa verde, and onion.
  • If you are making a stew or with sauce, serve it with white rice, green salad, and fried plantains or caramelized plantains. How To Make The Instant Pot Beef Tongue Stew Recipe Step By Step

Step 1: Turn on your electric pressure cooker in the Sauté function once it is hot, add the oil. Then add the onions, garlic cilantro and sauté until the onions are soft and change color.

Step 2: Now add the passata, Worcestershire sauce, salt and mix everything.

Step 3: Add the potatoes, carrots, broth, and mix everything. Finally, we add the pieces of the tongue. Cancel the Saute function.

Step 4: Cover the pot, select the Manual or Pressure function depending on your pressure cooker model, and set the time to 5 minutes. It will take about 10 minutes to get to pressure.

Step 5: Once the time is up, let the pressure release naturally for 10 minutes.

    How To Prepare A Beef Tongue

    Soak it: when youre ready to make some beef tongue, rinse it in cold water and then let it hang out in a large bowl of cool water for 10-30 minutes. If the water turns bloody after a few minutes, change the water and soak it some more. Look for blood clots and remove them.

    Scrape it: use a large knife and scrape the tongue to clean it. I sharpen my cleaver or large chef knife and scrape to remove the skin with the taste buds. Its really difficult and takes me about 20 minutes to remove about 80% of it. Its also possible to cook the beef tongue and then remove the chewy skin layer which slips off easily.

    Parboil : Some recipes recommend boiling the tongue for 20 minutes, letting it cool in cold water, then peeling it, and cooking it in a fresh pot with the rest of the ingredients. I find that the beef tongue skin is still too tough to handle and Ive tried parboiling up to 45 minutes with the same results. I dont like this step which is why I soak the tongue for 10-30 minutes to get rid of some of the blood and scrape as much of the skin off as I can.
