Yes! The finished broth freezes beautifully in freezer containers with tight-fitting lids. Or you can freeze the broth in ½-cup portions in silicone muffin pans, or 1-cup portions in larger plastic containers, then pop the frozen blocks out of the muffin pans and store them in heavy-duty ziptop freezer bags in the freezer. You can also freeze the broth in ice cube trays , then pop them into freezer bags for small amounts of stock to use in recipes. If you often make a certain recipe calling for chicken broth , then freeze the amount needed for your recipe in a plastic container, label it, and it’ll be ready to defrost and use.
You can also freeze chicken stock in heavy duty freezer bags. Set the opened bag into a measuring cup or tall bowl or mug. Add the measured amount of stock to the bag, then carefully press out as much air as possible and seal the bag tightly. Lay the bags flat in the freezer to freeze – they will take up less freezer space this way. Chicken Broth Instant Pot
Cut whole chicken apart into 2 legs, breasts, thighs, wings. Do not debone. Put pcs. into pressure cooker. Then add all vegetables, whole garlic with top sliced off, and parsley into pot.
- Pour in water, then add all spices. Put lid on and close steam valve. Set to pressure cook high for 40 minutes. When done allow to naturally release steam for 15 minutes.
- Use a strainer to remove chicken and vegetables from the pot leaving the broth inside.
- Pour broth into mason jars and allow to cool before refrigerating.
- Note: do not fill your pressure cooker pot over the max line inside
Remember to allow pot to naturally release steam for 15 minutes. This will get all of the nice juices out of the meat. And dont throw away that meat!! Use it for all sorts of things, ideas below.

Stock:

- stays liquid when cooled
- can be drunk straight as a hot broth
- can be used as a base in recipes like sauces, risottos, light soups
Bone Broth :
- is made completely from bones
- can have added vegetables and/or aromatics and/or seasoning
- is cooked extra long to extract more nutrients and collagen from the bones
- often has an added acid, like vinegar, lemon juice, or wine, added to the broth to aid in breaking down the bones and extracting the collagen and nutrients
- is seasoned and drunk as a broth for nutritional value or is used in recipes, either seasoned or unseasoned

How To Make Chicken Stock In A Pressure Cooker
The process of making pressure cooker chicken stock is the same as for a classic chicken stock, which I’ve explored in depth before.
You have lots of options for the chicken breast meat gives the best flavor, but is also the most expensive to use, and therefore not something we typically recommend. Wings, backs, and raw or cooked bones with meat and cartilage attached are all good. If I can, I always try to grab some chicken feet to throw into the pot as well, since they are by far the most collagen-rich of all the parts of a chicken, leading to stock with exceptionally high gelatin content and the very best body.
For the aromatics, you just need a classic mirepoixa combination of onion, carrot, and celeryplus garlic, some fresh herbs like parsley and/or thyme, and maybe a bay leaf. I’ve found that dicing the vegetables first, instead of using the larger chunks often suggested, leads to better vegetable flavor in the stock.
Once you’ve loaded up your pressure cooker with the chicken and aromatics, simply top it all off with water, making sure not to go above the cooker’s max-fill line. It’s okay if a few things stick up above the water level, since the internal heat of the pressure cooker will cook everything in there, above and below the water line.
Then seal it, bring it up to high pressure, and let it run for 45 minutesplenty of time to coax flavor and gelatin from your ingredients.

Whats The Difference Between Broth And Stock
The difference between broth and stock is mostly about the length of time it simmers and whats in the pot.
Stock is made from more bony parts and is simmered for a long time to release the gelatin from the bones. Broth is made from the more meaty parts and isnt simmered quite as long.
So, technically bone broth should be called bone stock. But it isnt. Because language is weird sometimes.
Why Is Homemade Bone Broth Better Than Store Bought Broth
I began making my own bone broth in the Instant Pot several years ago when a took more notice of the ingredients listed in store-bought chicken broth. There are a few things you will notice when you look at the label. First, you will notice that most store-bought broths add food coloring, concentrates, and flavoring. You will also notice that they all lack vitamins!
Homemade bone broth is full of vitamins that are leached into the broth from all the vegetables. The coloring from the broth also comes from carrots, so no dye is necessary. Youll find most broths use turmeric to add color. Homemade bone broth is also incredibly flavorful and not bland like you will find if youve ever tried to drink the store-bought broth by itself.

Storing And Freezing The Broth
Skimming off the fat. Strain the broth, then cool it to room temperature before chilling it overnight in the refrigerator. The fat will float to the top and the broth will set into a jelly consistency. The next day, I will skim off the fat that has accumulated on top.
Reduce and concentrate . If I don’t have a lot of freezer space, I will simmer the broth to reduce it by at least half before storing. When reheating the concentrated broth, dilute it with water as needed.
There are usually 3 ways to freeze the broth – 1) ice cube trays 2) ziploc bags and 3) containers.
Ice cube trays – great for sauces and stir-frys. Ice cube trays come in a wide variety of sizes so you can freeze them in different-size portions as required. Once frozen, pop them out to store them in ziploc bags or containers.
Ziploc bags – great for freezing flat. Ziploc bags also come in a wide variety of sizes so you can also freeze them in different-size portions as required. Compared to ice cube trays, they save a lot more space because they can be frozen flat. I used to use ziploc bags as well but I eventually stop because they are not as environmentally friendly. Even though some say that they can be washed and reused – they are a pain to wash, especially when they are oily.
How To Use Homemade Chicken Broth
So what should you do with your nice new batch of broth? The possibilities are endless! Chicken broth adds extra flavor and nutrition to almost anything. Here are just a few ideas to get you started.
- Cooking rice or any other type of grain.
- Making more flavorful mashed potatoes.
- As a base for soups.
- Making gravies and sauces.
- Deglazing your skillet/making a pan sauce.
- Adding flavor when cooking in the Instant Pot.

What Is Instant Pot Chicken Bone Broth Good For
Other than the many soups and stews mentioned throughout the post, here are just a few of the ways in which bone broth is good for us:

- Vitamins and minerals like calcium and magnesium.
Substitute Instant Pot chicken broth in any recipe that calls for water to add additional flavor! You can also use it for oil free cooking when sauteing vegetables or chicken in skillet meal recipes.
What Bones Make The Best Chicken Stock
You can use bones from a raw chicken or a roast chicken. I usually make stock from roasted chickens because of the frequency with which we consume grocery store rotisserie chickens in my house its a good way to put the leftover bones and scraps to use in future meals.
I stockpile bits and pieces in the freezer. Roasted carcasses, leftover leg bones, wing tips, and chicken necks add up over time. Just be sure to label those bags of bones so you dont pull out frostbitten mysteries a year later.
You can also sometimes buy bones or leftover chicken parts at grocery stores and markets, like the bones, backs, necks, or feet left over from butchering. These parts have a lot of cartilage that makes great stock with a velvety body.
Oh, and make sure to add any chicken fat or skin you can. Yes, it makes a fatty stock, but the fat will float to the top as the stock cools, and you can skim it off later. What skin and fat add are a cheery yellow color and tons of great flavor. Remember, if you don’t want the extra fat, you can always remove and discard it later.
In general, dont sweat it. Just make stock and use it.
