Despite the silicone mold being non-stick and using a cooking spray, I recommend to grab a small silicone spatula and go around the edges and bottom really tight and close to the mold. This will result in perfectly looking egg bites.

To be able to pop egg bites out of the mold, you would have to wait a few hours for egg bites to cool off. Like a very long time, if you ask me.

First, youll need a silicone egg bite mold. I purchased mine from Amazon, but Ive seen them sold in some stores. If you decide to make them often, I would consider purchasing two molds so you can make them quicker.

I purchased the one from the Instant Pot Company because it is incredibly deep and sturdy. You dont want your molds being all willy nilly, especially when theyre filled with egg!

As I mentioned, the process for each of these egg bites flavors is the same.

Grab a blender and blend the eggs, cottage cheese, and shredded cheese until nice and smooth.

After thats done, add the chopped ingredients and just pulse a few times until everything is mixed together and the bits of flavoring are chopped up a bit more.

Youll be reserving about 1 Tablespoon of the crumbled bacon to put in the bottom of the egg bite molds before pouring in the egg mixture, so dont forget to do that .

Crack six eggs into your blender.

The blender does incorporate a bit of air to the egg whites which helps to keep the eggs fluffy, plus it makes sure everything is super well blended together and youll have a nice, yellow consistency throughout.

Add a handful of shredded cheese about half a cup to the eggs and blend until mixed.

Stir in cooked, chopped bacon.

Hint: If youve made a batch of bacon in your oven and frozen it for later youre a rockstar! Just grab the slices and chopped em!

Add salt & pepper.

Grease your silicone molds with some nonstick cooking spray.

Then, pour about a cup of water into your Instant Pot.

Egg White & Red Pepper Bites

I wanted to recreate the popular Starbucks flavor by using egg whites and roasted red pepper, but something interesting happened the first time I tested this recipe the ingredients all floated to the top of the mold, as pictured above.

That means all of the toppings were on the bottom of the egg bite, leaving the rest of the egg bite totally plain. This didnt happen with my other egg bites using the whole egg only the egg whites.

You can get around this by adding your veggies, or other add ins, to the mold first, then pouring the egg white mixture over the top to fill the mold. The spinach still sometimes floats to the top, but the other ingredients disperse better!

Ive included two more flavor variations in the recipe below a simple Gruyere version , and a pizza version made with sun-dried tomatoes. I hope youll enjoy them!

  • Mix. This recipe is for 2 egg bite molds. In a large bowl, mix together all the ingredients except ketchup. Grease egg mold and sit aside.

  • Prepare. Pour 1 1/2 cups of water in the IP. Cover lightly with silicone lid. Arrange on a trivet off center so that the cups are not resting over each other.
