  • Sauté veggies: Turn Instant pot to sauté setting and sauté onion and carrots in oil. Remove veggies to a plate.

    To make ahead: If youd like to make this ahead of time, I suggest using the stovetop method!

    To freeze: Allow the dish to cool completely. Store in a freezer safe container in the freezer for 3-4 months. Allow to thaw in the refrigerator and reheat slowly on the stove or in the microwave.

  • Dry. Pat the beef dry with paper towels.

    How To Make It

    To start, wash and pat dry the boneless short ribs and season them with salt and pepper from both sides.

    Set Instant Pot to Sauté on high heat by pressing sauté button twice.

    Now we are going to brown the meat! This is a very important part that you cannot miss! It will give the meat that beautiful crust outside and bring out the best flavor!

    I like to brown the meat in 2 batches not to overcrowd the pot. Brown it for about 4-5 minutes on each side until you get dark brown crust, then remove from the pot.

    After its done, add sliced onion and sauté them for about 8-10 minutes until they are translucent and have golden color.

    Add crushed garlic and tomato paste, stir and cook for a couple of minutes.

    Add red wine and cook for about 10 minutes. This is another important step! The wine needs to reduce in half and get more concentrated. It will help to give more aroma to the meat later while cooking together.

    When the wine is reduced, add beef broth and carrots.

    Put the browned meat back, so it will be halfway covered with liquid.

    Add some thyme and rosemary.

    Cover with a lid and cook on Stew high pressure for 40 minutes. Make sure that the venting knob is turned to Sealing!

    When it is done, let it naturally release the pressure for 15-20 minutes. Then switch the knob to venting position and release the steam. Make sure the steam is fully released and the valve is completely down before opening the pot!

    Today, Im sharing my first instant pot recipe. In case you dont know, Instant Pot is a hugely popular electric pressure cooker in North America and the UK. And, after a long wait, I finally got hold of this gadget a few months ago. In case youre curious, mine is a 6 quart / 5.5 litre sized pot.

    During this time, I have tried several Korean recipes in this pressure cooker, but by far the best one to come out so far is todays braised Korean short ribs !

    And, I tell you, these ribs give a ton of flavor while being less time and labor intensive when compared to traditional galbi jjim. It really tastes amazing and I can proudly say that its our familys favorite dinner at present.

    When the words short ribs are mentioned, it really doesnt ever surprise me to see my fellow meat lovers eyes light up and mouths begin to drool.

    Thats because theyre the most tender, fall apart, melt-in-your-mouth cut of beef one can devour. And making them in the Instant Pot only fuels the cause for cooking them to absolute PERFECTION.

    The added bonus here is were making a rich French burgundy-Asian infused sauce that is going to have a wonderful combination of sweet AND savory! This one is GUARANTEED to be a home run!

    Heres How I Made It!:

    Lets start by making the sauce. Take some reduced sodium beef broth

    a dry red wine

    oyster sauce

    light brown sugar

    Whisk together until well combined and set aside.

    Now take some star anise

    whole cloves

    and a cinnamon stick, broken into pieces.

    Add them to a metal tea ball.

    and securely shut and lock the tea ball so the spices are contained. Set this aside as well.

    Then, take a large Spanish onion

    and cut it into quarters. And, you guessed it, set aside.

    Now, lets focus on our short ribs! Youll want either some bone-in or boneless short ribs Bone-in or boneless, whichever you choose the end results will be the same and, if using bone-in, theyll fall off the bone anyway when serving!

    Now lets take a little Kosher salt

    and some black pepper

    and sprinkle it on the short ribs .

    Looka that! All rubbed in and seasoned!

    You can use boneless short ribs for Instant Pot Short Ribs but you will need to decrease the cooking temperature because short ribs without the bone will cook faster than the short ribs with the bone. Although I prefer the ones with the bones to add flavor. Reduce the cooking time to about 35 minutes instead of 45 for boneless ribs.

    Bonus Recipe: 10 Minutes Short Ribs Noodle Soup

    Perhaps my favorite thing to do with the remaining Galbi Jjim is make beef ribs noodle soup. Its a hearty soup that can make a full meal all on its own, and it takes just minutes to make. The bonus recipe follows below.

    • 4 oz thin wheat noodles
    • 2 cups broth or water
    • 4 tablespoons sauce from braising
    • 1 teaspoon minced ginger
    • 1 tablespoon soy sauce
    • Chili garlic sauce or any hot sauce you prefer
    • green onions for garnish
  • Cook the noodles according to the instructions on the package. Once done, drain and run tap water over the noodles to stop the cooking. Drain thoroughly and set aside.
  • Meanwhile, heat the broth or water, sauce, minced ginger, and soy sauce in a small pot over medium-high heat until boiling. Turn down the heat to let it simmer for 5 minutes while the noodles cook. Taste the soup. Add more salt if needed.
  • Add the leftover short ribs and radishes. Cook until heated through, 2 to 3 minutes.

    Instant Pot Short Ribs

    1. Fill a large pot with some water and bring it to boil. While the water is boiling, soak the ribs in cold water. Once the water in the pot is rapidly boiling, transfer the short ribs into the pot and boil them over medium high heat for 6 to 8 minutes.

    Drain the water away and rinse the ribs in cold running water. Cut off any excess fat from the ribs. Place the short ribs in the instant pot.

    2. Meanwhile, blend the sauce ingredients in a mixer or food processor until smooth.

    3. Pour the sauce over the short ribs. Put the lid on and make sure the vent is in the sealed position. Set the pot to pressure cook on high for 35 minutes. After the pressure cook cycle is complete, allow the pressure to naturally release for 15 mins . Then do quick release and wait until the quick release cycle is complete. Be careful of any remaining steam. Unlock and remove the lid.

    Using a slotted spoon, transfer the meat to a large bowl then cover and set aside. Cancel the keep warm mode.

    4. Add the prepared vegetables into the pot. Set the pot to sauté for 20 minutes and cook the vegetables until soft. Meanwhile, the sauce will turn thick and glazy.

    Set the pot to off and transfer the vegetables and the sauce to the meat, then toss to coat. . Garnish with toasted sesame seeds.

    5. Serve the ribs with steamed rice and other Korean side dishes. Steamed vegetables such as broccoli go well too.

    Korean Style Short Ribs

    Theres something about short ribs that I adore. Maybe its the meaty and marbled cut or the enjoyment of eating meat off the bones or even the way it naturally absorbs the flavors of what its slow cooked with. Regardless, its one of my favorite cuts of meat to prepare this time of year when all I crave is comfort food. Im also a sucker for rice and when paired with these Korean Style Short Ribs, the rice just captures every last drop of flavor of umami.

    Korean short rib, or galbi/kalbi, usually involves flanked short ribs. I used the English cut short rib instead but either could be used in this recipe. The marinade is cooked along with the beef and when pressurized, the flavors are intensified and better absorbed in a shorter amount of time.

    You could even place the beef with the marinade in a storage bag in advance so that everything can be placed in the Instant Pot after a long day with little preparation. Leftovers of this are even better the next day. The marinade or remaining sauce after cooking is great as a thin sauce to serve over the ribs and rice. Ive also used leftover meat in salads and Korean style tacos!

    Beef Short Ribs Instant Pot Recipe

    • Place 1 tablespoon of the oil into a large frying pan and place over high heat.
    • Brown the short ribs on all sides and set aside.
    • Set your instant pot to saute and add the remaining oil, followed by the onion, garlic, thyme, and salt. Saute for about 5 minutes until the onions have softened.
    • Add the beef stock and mix well.
    • Add the brown short ribs to the instant pot and put on the lid.
    • Set to high pressure for 45 minutes for large ribs, 30 minutes for smaller ribs.
    • Use the natural release method and remove the lid.
    • Remove the ribs and place them into a lined roasting tray.
    • Pour half the remaining liquid into a small saucepan and place over high heat to reduce. Boil until reduced by half, then blend with an immersion blender until smooth.
    • Broil the ribs for 5 minutes, or until crispy.
    • Serve the ribs drizzled with sauce and with a side of Keto Coleslaw.

    If you’re used to a low and slow Dutch Oven Braised Short Rib recipe, you may notice some small differences in this Instant Pot version. While this Instant Pot recipe is excellent if you need to save time, we don’t feel like you get quite as much flavor or quite as tender of a short rib out of the Instant Pot as you do when they spend all day in the oven. The difference is slight but it’s there. Just an FYI for any die-hard braised short rib fans!

    And take that with a grain of salt: We had a handful of taste-testers blind taste these next to an oven-braised short rib, and none of them could tell any difference.

    So basically, these short ribs are delicious, and this is a perfect shortcut if you don’t have time to let a pot of short ribs braise away all day.
