Instant Pot Classic Pot Roast | Boneless Chuck Roast Recipe

In our Instant Pot Pot Roast experiment, we pressure cooked 3 nearly identical chuck roast steak at High Pressure for 20 mins, 45 mins, and 75 mins with an Instant Pot Electric Pressure Cooker.

Out of the 3 results, we enjoyed the 45-Minutes Instant Pot Pot Roast the most.

It was overall the most well-balanced in terms of Meat Texture, Meat Juice, Meat Flavors, and Sauce. It was definitely the most delicious one!

So, we developed this easy pot roast instant pot recipe based on this cooking time.

How To Make Pioneer Woman Instant Pot Pot Roast

  • The beef chuck roast should be cut in half lengthwise.
  • The steak should be seasoned on all sides with salt and pepper.
  • Using the saute function of the Instant Pot, bring the olive oil up to temperature until it is hot.
  • Put the beef that has been seasoned into the saucepan and brown it on both sides, which should take approximately four minutes on each side. Do not move the steak until you are ready to flip it after it has seared, it should readily release from the bottom of the pot. Do not move the meat until you are ready to turn it.
  • After browning the beef on both sides, place it on a plate that has been thoroughly cleaned.
  • The onion should be added to the Instant Pot while the sauté function is still active. Cook for about 4 minutes, stirring frequently and scraping the bottom of the pot to remove any browned bits until the vegetables have become softer and have a light brown color. After stirring in the garlic, turn off the Instant Pot by pressing the cancel button.
  • To the beef broth, tomato paste, and Worcestershire sauce, add the beef broth. Give it a good stir, and then use a wooden spoon to scrape any browned bits off the bottom of the pot.
  • Return the beef to the pot it was cooked in. You can use either fresh thyme sprigs or dried thyme in this recipe.
  • After the food has been cooked, make sure the lid is on the Instant Pot and move the steam release valve to the sealing position. Prepare food by hand or under pressure.
  • Carve the roast and serve it with the gravy.

    • It’s important to let the pressure release naturally. Leave it for another 20 minutes after cooking to allow it to release.
    • After 20 minutes, feel free to release the vent to release any extra steam and allow you to open the lid.
    • Don’t skip searing the beef – this helps lock in the flavor!
    • Halving the roast helps cut down on the cooking time and allows you to distribute the seasoning more evenly. This will give you a more flavorful dish.

    Why Do You Qpr When Cooking The Roast Won’t That Make It Tough

    • Multiple Cook Times. Since we are cooking the beef pot roast a second time when we add the veggies to the Instant Pot, it will still come out super tender.
    • Overcooking. I use QPR for the first cooking cycle because NPR allows the ingredients to cook for longer in the residual heat. If I were to use NPR for both cooking cycles, the meat would get overcooked from all the residual heat.
    • Hybrid Release. I like to use both QPR and NPR for recipes that are cooked in multiple cycles so that meats don’t get overcooked. You simply use QPR after the first cycle where you cook the meat and then NPR after cooking the meat with the veggies. I use this same technique with my Pressure Cooker Beef Stew.

    What Kind Of Roast Should I Buy

    There are dozens of cuts of meat, and different stores sell different types at different times, so it can feel overwhelming.

    But, knowing two things will make it easy to get a piece of meat that will make a great roast.

    First, look at the label. Most stores include an icon or label indicating what its suited for, and you want to pick something good for a pot roast, braising, or slow cooking.

    Second, look at the name. Anything with roast, chuck, round or rump will provide a nice sized, well-flavored meat.

    My go-to cut is the chuck roast. It has nice marbling which, as it dissolves, helps the meat break down and become more flavorful and tender. Its also on the cheaper end of the cuts regularly available in the store, which is a total bonus!

    How long does it take to cook roast beef in an Instant Pot?

    You will need to cook for 20 minutes per pound. Depending on the size of your roast, you can adjust accordingly! For this recipe, I use a 3 pound roast and recommend cooking it for 60 minutes.

    Can I use frozen chuck roast in an Instant Pot?

    You can use a frozen chuck roast to make Instant Pot Pot Roast. Simply add about 20-30 minutes to your pressure cooking time if cooking a frozen roast. There is no need to sear it first just rub the seasoning on the frozen roast and pressure cook as instructed. You can reverse sear the roast after it’s done following the same instructions as our Instant Pot Prime Rib.

    Can you overcook roast beef in an Instant Pot?

    If you follow the recipe directions and use your Instant Pot correctly, you should have a tender roast each time. Make sure to cook for approximately 20 minutes per pound, and if you aren’t certain whether your roast is done or not, check it with a meat thermometer before you take it out of the Instant Pot.

    How do you thicken the drippings of pot roast?

    You can make the beef gravy right in the Instant Pot while the pot roast rests using a cornstarch slurry. This is one of the best ways to thicken a sauce. Simply mix equal parts water and cornstarch until it forms a paste, then add it to the drippings and mix together. This will thicken the drippings into a gravy.

    What Is Pot Roast

    Pot roast is more of a method than a specific cut of meat. To make it, sear a large cut of beef until browned on all sides, and then cook it with aromatics like herbs, onions, carrots, and broth until its melt-in-your-mouth tender. You can make this in a Dutch oven on the stove-top, in the oven, in a slow cooker, and a pressure cooker. In this recipe, we are using a pressure cooker to make the pot roast. A pressure cooker takes the cooking time down dramatically.

    Longer answerI prefer my roasts fork-tender, so I generally cook them a little longer. However, the roast in this recipe cooks up fork tender, but it held together well enough to be sliced!

    If youre firmly in the fall-apart-tender camp, Id recommend adding a 5 to 10 minutes to the cook time and 5 minutes to the natural pressure release.

    When cooking marbled meats like pot roast, you ideally want to make sure it reaches an internal temperature of at least 200°F so that the collagen softens and breaks down, resulting in a tender, flavorful meat.

    Use an instant-read thermometer to verify the pot roast is at least 200°F in the thickest part after cooking.

    If you do like a sliceable roast, be sure to cut the meat against the grain. Cutting against the grain will give you more tender, less chewy bites.

    Is Pot Roast Low Carb

    On it’s own, pot roast is a low carb meal, since it’s just a slow cooked beef roast. This recipe includes potatoes and a thick and silky gravy, which makes the recipe a bit high in carbs due to the starch needed to thicken it.

    If you’d like to reduce the amount of carbs in this Instant Pot Pot Roast, you should not include the potatoes. You can also either skip the gravy, use keto gravy, or enjoy the broth without thickening it, like an au jus.

    What Do I Serve With Pot Roast

    Roast with potatoes and carrots are the classic combination. This recipe cooks up small potatoes along with carrots. So the beauty of this recipe is that you have everything you need to make a complete meal out of it.

    However, Ive made those steps optional so if you prefer your roasts with mashed potatoes, its easy to make the switch. When cooking mashed potatoes for roasts, I like my potatoes to take on the roast flavor. Therefore, I generally follow my mashed potatoes recipe but just cook them in a steamer basket above the juices in the cooking pot.

    Also, in my house, I cant get away with making a roast and not making Yorkshire. My family prefers the Betty Crocker version Ive been making for years however, the next time I make roast Im planning to try this Yorkshire Pudding recipe, which is similar but less likely to deflate. We like to use our popover pans for crispy individual servings, you can just use a muffin pan.

    • Place the butter and oil in your instant pot and set to Saute setting.
    • Season the roasting joint with salt and pepper.
    • When the butter is melted, add the roast and sear on each side until well browned, about 1 1/2-2 minutes on each side.
    • Remove the roast from instant pot and set aside.
    • Add in the onions, cook while stirring occasionally for 3 minutes until translucent.
    • Now add the garlic and cook for 1 further minute before turning off Saute setting.
    • Place the roast back into the Instant Pot and pour in the beef broth.
    • Secure the lid and select Manual and cook the joint for 50 minutes.
    • Use natural or quick release, then add the carrots and potatoes to the pot.
    • Place the lid back on and cook on Manual for 10 additional minutes.

    How To Make A Pot Roast In Your Pressure Cooker

    • Cut. Cut the beef chuck roast into several pieces, each the size of your palm. Place the beef into the Instant Pot.
    • Add. Mix together the beef broth, tomato paste, Worcestershire Sauce, dried Rosemary, dried thyme, salt and pepper. Then add the onions to the mixture.
    • Cook. Pour sauce on chuck roast. Close the lid and pressure cook on HIGH pressure for 15 minutes. Immediately release all pressure.
    • Veggies. Add potatoes, cut up carrots or baby carrots, onions, celery, and mushrooms.
    • Finish. Close the lid and cook on high pressure 4 minutes. Allow the pot to rest undisturbed for 10 minutes. Then, release all remaining pressure. Remove beef chuck and shred.
    • Serve. Place on a serving dish. Arrange all the vegetables around the meat. Serve the pot liquid as a sauce or au jus gravy on the side.
    • Optional: You can make a cornstarch slurry to thicken the sauce, but you may not need to.

    When Do You Add Potatoes And Carrots

    For a complete meal, potatoes and carrots always pair perfectly with a tender pot roast. However, I do not recommend cooking small potato chunks or baby carrots the entire time you cook your pot roast, as your vegetables will turn to mush.

    Instead, it is best to cook your potatoes and carrots AFTER the roast has cooked, when the meat is resting. I recommend that once the roast has cooked, remove it from the inner pot. Tent with foil to stay warm while the vegetables cook. Add in the potatoes and carrots and set the cooking time to 10 minutes on high pressure. Once the potatoes and carrots are cooked, you can slice up the roast and serve with the perfectly cooked vegetables.

    Alternatively, you can cook your Pot Roast for 10 minutes LESS than the total indicated time. So for a 3-pound fresh roast, cook for 50 minutes on high pressure. Then let the pressure release naturally for 10 minutes. Open up the inner pot and add the potatoes and carrots to the pressure cooker. Seal the pressure cooker and cook for high for an additional 10 minutes. Allow the pressure to release for at least 10 minutes naturally, then do a quick release of any remaining pressure. Let the roast rest for 5-10 minutes before serving with the potatoes and carrots.

    Safe Handling And Storage

    • Wash hands after handling the ingredients, especially the raw chuck roast. Wash all cutting boards, utensils, and dishes after touching the beef.

    How Long Do You Cook Chuck Roast In An Instant Pot
