    When I first posted the one skillet pork chop and potatoes recipe, I received several requests for a similar recipe that could be made in the Instant Pot.

    Although I still make the oven baked version, this pork chops and potatoes and pork tenderloin that is made in the Instant Pot, have become one of my favorite weeknight meals.

    Lets face it, as much as I want to be prepared and organized, there are times that I just dont have a plan for dinner.

    That is when I run to my freezer, open it up, and stare at it endlessly. I do this until something jumps out at me, knowing that I am desperate for an idea for dinner.

    This is exactly how this pork chops and potatoes recipe was born!

    Savory Buttery And Deliciously Tangy You Will Love How Easy It Is To Make These Fabulous Pork Chops In Your Instant Pot

    Prep Time: 0 minutes

    2 + 6 tablespoons butter

    1-1/2 to 2 pounds boneless pork chops, 4 – 6 chops

    1 ounce dry ranch seasoning, 1 package

    1/2 cup water

    6 cups arugula or spinach optional

    Directions

  • Add 2 tablespoons butter to the Instant Pot. Using the display panel select the Saute’ function and adjust to More or High.
  • When butter melts, brown the meat on both sides, 2 – 3 minutes per side. Meat will not be cooked through. Do not crowd the pot–you may have to work in batches. Transfer browned meat to a shallow dish and cover loosely with foil.
  • Add water to the pot and de-glaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  • Put the meat back into to the pot, top with remaining 6 tablespoons butter and sprinkle ranch packet over the top.
  • Turn the pot off by selecting Cancel, then secure the lid, making sure the vent is closed.
  • Using the display panel select the Manual or Pressure Cook function*. Use the +/- keys to program the Instant Pot for 3 minutes and adjust to LowPressure.
  • When the time is up, let the pressure naturally release for 5 minutes, then quick-release the remaining pressure.

    I was staring into the cold case filled with white papered wrapped meat from the butcher, not knowing what I was going to prepare for dinner.

    That is when I saw the lonely stack of frozen pork chops begging for attention. I grabbed the frozen pack and as I turned to close the heavy freezer door, I looked down and saw a stack of russet potatoes staring at me.

    I picked up a few and knew that a dinner could be born with these two main ingredients.

    I knew I needed a little flavor to add to this meal and when I opened the spice cabinet a packet of my homemade dry ranch seasoning literally fell off the shelf.

    It was meant to be!

    Ranch dressing goes great with just about anything. But a little sprinkle of dry seasoning on both the pork chops and potatoes seemed like just the answer.

    I pulled my Instant Pot out and placed it on the counter. I immediately turned to the refrigerator to decide what type of liquid that I was going to add to bring the pot up to pressure.

    When I pulled on the handle and opened the door, I saw the remaining mushrooms from the weeks menu hanging out on the top shelf.

    Why not? By all means, this was a throw together meal that I was just hoping was going to be edible.

    Cook The Potatoes At The Same Time

    I added a few more ingredients and added the frozen pork chops into the liquid. The potatoes were added to thesteamer basket and placed on a tall trivet.

    As I closed and locked the lid, I prayed for the best.

    Suggestions For This Recipe:

    • To get tender, fall-apart pork chops, cook for about 30 minutes in the Instant Pot and allow to slow release for about 10 minutes. If youre using a thicker cut of meat, bump the time up by five minutes. Thinner slices can be cooked for 25 minutes.
    • You can use canned cream of mushroom soup for this recipe. Just open and pour. But if youre looking for a healthier option or dont have any on hand you can make your own!
