I have made pot roast at least a hundred times in my life, but I have never really had one like this. My Instant Pot Pressure Cooker Pot Roast Recipe is a lot like the recipe I use in my slow cooker, only better. Not only does it taste great, but it also shreds easily for leftover sliders or wraps. Not only that, but I love how quick and easy this recipe is to make.

Brown Beef Roast In Instant Pot

Press Saute button to Sauté More function to heat up Instant Pot. It will switch to ON on the screen.

Wait until it says HOTon the screen .

*Pro Tip: Make sure Instant Pot is as hot as it can be in order to induce a Maillard reaction.

Add 1 tbsp olive oil in the Instant Pots inner pot. Ensure the whole bottom is coated with olive oil.

*Note: In total, there are 6 sides to a beef roast. We are browning 4 sides of the beef roast excluding both ends .

Pat dry the beef roast with paper towel. Generously season one side of the beef roast with kosher salt and black pepper.

Place the beef roast in Instant Pot .

Brown the first side for 4 minutes. Generously season the other side with salt and black pepper.

Brown that side for 3 minutes and 30 seconds.

Finally, brown the other 2 sides for 2 minutes and 30 seconds per side .

Set aside the browned beef roast.

By Step Instructions For Instant Pot Roast Beef

  • Turn on pot on to saute.
  • Add two tablespoons of oil, and let it get hot.
  • Season beef with salt. Place beef into pot and let it get brown on both sides by cooking for about 5 to 6 minutes on each side.
  • Mix the package of stew mix with water.
  • Pour seasoning over roast.
  • Place lid on the pot, and use the meat setting. When roast has finished cooking, perform a natural release. Remove the roast from the pressure cooker.
  • Steam potatoes or other desired vegetables for 6 minutes on high pressure.
  • Perform a quick release on the vegetables.
  • If you want gravy, mix together 2 tablespoons cornstarch and 1/2 cup of water together, and pour into liquid in pot. Set the pot on saute, and cook until the gravy has thickened.

    How To Cook A Roast In The Instant Pot Tips & Tricks

    • You really do need to cook a blade or chuck roast for 120 minutes. Blade and chuck roasts are very tough and have fibers that absolutely need to be broken down by cooking, and cooking for a long time. Theses roasts take 8-10 hours in the crockpot, so 2 hours in the Instant Pot is definitely the way to go!
    • You need liquid and not just liquid you need DELICIOUS liquid. Food can be a bit bland when pressure cooking so you need to spice up!
    • If you have a roast that is from a quality butcher, you can try cooking it at 90 minutes. Grocery store roasts are generally lower quality. Play it by ear based on the meat quality of the roast you are cooking.
    • Thick roasts may need to be cooked a little longer as its thickness that determines how those fibers are going to break down inside.

    Just writing this post up makes me want to make this roast again. Its similar to that Mississippi roast in the fact that I use a package of dry Ranch dressing in it, but theres no peppers. Trust me, the dry Ranch dressing makes this delicious!

    Can I Use Frozen Beef For This Recipe

    You wouldnt think that youd be able to go from freezer to Instant Pot in this recipe, but, just like using frozen chicken breasts, you can also use frozen beef for this recipe. Because the meat cooks with steam and pressure, it will thaw and then cook all at the same time.

    The only difference is in the cooking time. Add about 20-30 minutes to your pressure cooking time if going with a frozen roast. No need to sear it either, just rub the spices on the roast and then put the frozen roast in the pot and go to the pressure cooking step.

    What Are The Best Cuts Of Meat To Use

    The best cuts of beef for pot roast are tougher cuts of meat like chuck, brisket, and round.

    Traditionally, the beef cooks at a low temperature for a long time. Its because of this that tougher cuts of beef work so well. When I say tougher cuts of meat, Im talking about the leaner cuts with lots of connective tissue.

    Why This Method Works

    • Never comes out dry! It cooks with lots of moisture in the Instant Pot so it doesn’t come out dry.
    • Cooks in less time! Typically a large cut of beef takes hours and hours to roast in the oven but in the Instant Pot it cooks up almost completely hands-free in only a couple of hours.
    • Cooks perfectly! Comes out with all the juicy fall-apart tenderness you expect!

    How To Cook Instant Pot Pot Roast:

    • Place the butter and oil in your instant pot and set to Saute setting.
    • Season the roasting joint with salt and pepper.
    • When the butter is melted, add the roast and sear on each side until well browned, about 1 1/2-2 minutes on each side.
    • Remove the roast from instant pot and set aside.
    • Add in the onions, cook while stirring occasionally for 3 minutes until translucent.
    • Now add the garlic and cook for 1 further minute before turning off Saute setting.
    • Place the roast back into the Instant Pot and pour in the beef broth.
    • Secure the lid and select Manual and cook the joint for 50 minutes.
    • Use natural or quick release, then add the carrots and potatoes to the pot.
    • Place the lid back on and cook on Manual for 10 additional minutes.

    Tips For Making The Best Instant Pot Pot Roast:

    • Like I mentioned before, please do not add the veggies for the first cook time. You do not want your veggies cooking an extra 60+ minutes under high pressure! 3 minutes and they are perfectly tender and fluffy.
    • You can skip searing the meat if you need to cut out some prep time, but it does add significant flavor to the dish overall. If you dont sear, youll find that your juices will be more beefy and you will taste less of the other flavors.
    • If you need to save some time, cut the roast into 2-3 chunks and pressure cook for 40-50 minutes, or save even more time by using pre-cut stewing beef.
    • All of my Instant Pot recipes are tested in a 6 quart Instant Pot.

    • OIL: I use a combination of butter for flavor, along with some oil to stop the butter from burning when I saute the beef. You can use any type of oil, I usually opt for a flavorless oil.
    • BEEF: I use a 3-5 lb beef roast joint, something like chuck, round roast or brisket . The cut you select is entirely down to personal preference.
    • ONION & GARLIC: add great flavor to the dish and are cooked along with the beef for maximizing flavor.
    • LIQUID: I use 1 cup of beef broth to braise the beef. You could use water or add a splash of wine too.
    • VEGGIES: I add carrots and potatoes towards the end of the cook so this becomes a meal in one. You can add in any veggies that you enjoy eating, for example mushrooms or bell peppers. You can replace the potatoes with cauliflower if following a low-carb diet.
