  • The oil should heat within 30 seconds. Sear the meat on all sides in the bottom of the pan.

  • Remove the meat to a clean plate before deglazing the pan.
  • To Deglaze The Pot: after the meat is removed from the pressure cooker, carefully drain out any excess oil. Add the stock to the pot, stirring and scraping the bottom of the pot of the stuck on brown bits. Those bits are full of flavor and will help enhance the sauce.

  • Instant Pot Pot Roast

    Cooking a pot roast in the Instant Pot is one of my favorite ways to cook a chuck roast. In less time that it takes to roast in the oven, you get a roast thats tender, flavorful, and tastes like it cooked all day.

    Now, I will add a disclaimer here.

    I talk to a lot of people about Instant Pots and roasts. I always make sure to tell them, youre still cooking a large piece of meat.

    Youll need to allow time for the roast to come up to pressure, then it will start the cook time. Not a big deal, but important to know, you know?

    The first time I made a roast in my Instant Pot, I didnt take into account the time to come to pressure and rest.

    I think we ate dinner at 8 pm that night and I told the kids we were taking up a European dining schedule. They looked at me like I was crazy and then they ate it anyway.

    Just remember, its an Instant Pot, not a Right this instant Pot. A little patience is still required!

    How To Cook A Roast In The Instant Pot

  • Cut your boneless chuck roast in half. Season one side of each half generously with salt. Set your Instant Pot to saute mode and add vegetable oil. Once hot, add one-half of the roast to the pot salted side down. Sear for 4 minutes, then flip and sear the opposite side for another 4 minutes. Remove, set aside, and repeat with the other half of the roast.
  • Add more vegetable oil to the pot along with minced garlic and onion. Saute for 3 to 4 minutes, stirring often, until soft and fragrant. Then, add red wine. Saute for another 5 minutes, stirring frequently, until the liquid of the wine reduces by half. Return both halves of the roast to the pot along with beef broth, tomato sauce, rosemary, thyme, and salt and pepper.
  • Stir together and submerge the roast in the liquid. Add the lid back to the pot and set the timer for 60 minutes. Then, let it naturally release the pressure for 20 minutes. After 20 minutes, you can release the vent to get rid of any excess steam before removing the lid. Remove the meat from the pot and set aside.
  • Skim the top of the liquid with a ladle to remove any excess fat, and discard. Then, add cornstarch to beef broth and stir until combined. Slowly add the cornstarch slurry to the Instant Pot and stir until the mixture thickens. Pour the sauce into a serving dish to use as gravy over your roast.

    To start this recipe, youll need to pick out your cut of beef. I love using a Chuck Roast because its marbled, giving it great flavor and its usually pretty affordable.

    PRO TIP: The key to getting this roast to cook in a short amount of time is all based on how small your beef is cut when it goes into the instant pot. If you dont want to cut your beef into smaller pieces, expect it to take much longer to cook.

    Before you go purist on me, please know that not only is a pot roast in the Instant Pot ridiculously easy and relatively fast its also insanely flavorful. Balsamic vinegar, tomato paste, and fresh herbs transform simple chuck roast into rich, intensely flavored pot roast with gravy.

    Cooking Pot Roast in the Instant Pot is one of my favorite ways to make roast. Its tender, full of flavor and always welcome at our dinner table!

    Oddly enough, my favorite part of the dish besides the roast were the carrots.

    Turns out Im really the only cooked carrot lover in our household, but I still throw a whole bunch in anyway.

    Tip : If Possible Dont Stack Your Meat When Freezing Meals In The Instant Pot

    We have learned this the hard way. Because the Instant Pot cooks so fast, if meat is stacked, its really hard for it all to cook evenly. The outside gets done and the inside remains pink as a pig. If its impossible to not stack your meat, just be sure to check for doneness throughout. If its not done, move the meat around with some tongs and cook on high pressure for a few more minutes.

    How To Make Pot Roast In The Instant Pot#

    This recipe is prepared in three stages:

    First, youll sear and pressure cook the meat. Once that cooking program begins, you can walk away from the pot if you like itll default to the Keep Warm setting and stay hot and ready to carve for up to 10 hours.Second, youll transfer the cooked pot roast to a carving board, strain the fat off of the cooking liquid, then add the potatoes and carrots to the pot with the liquid and cook them under pressure on their own.Finally, when the cooking program ends, youll do a quick pressure release on the pot, carve the roast, spoon the vegetables out of the pot, and pour some of the cooking liquid over everything to serve.

    How Long Does It Take To Pressure Cook A Sirloin Roast

    HOW TO MAKE POT ROAST IN THE INSTANT POT!

    There is no definitive answer to this question, as the time required to pressure cook a sirloin roast will depend on the specific breed of horse or cow used, as well as the specific recipe.

    However, average times for cooking a rump or loin of cattle can vary from around 2 hours and 45 minutes to 3 hours and 45 minutes, depending on the heat source and pressure used.

    How long does it take to cook roast beef in an Instant Pot?

    You will need to cook for 20 minutes per pound. Depending on the size of your roast, you can adjust accordingly! For this recipe, I use a 3 pound roast and recommend cooking it for 60 minutes.

    Can I use frozen chuck roast in an Instant Pot?

    You can use a frozen chuck roast to make Instant Pot Pot Roast. Simply add about 20-30 minutes to your pressure cooking time if cooking a frozen roast. There is no need to sear it first just rub the seasoning on the frozen roast and pressure cook as instructed. You can reverse sear the roast after it’s done following the same instructions as our Instant Pot Prime Rib.

    Can you overcook roast beef in an Instant Pot?

    If you follow the recipe directions and use your Instant Pot correctly, you should have a tender roast each time. Make sure to cook for approximately 20 minutes per pound, and if you aren’t certain whether your roast is done or not, check it with a meat thermometer before you take it out of the Instant Pot.

    You can make the beef gravy right in the Instant Pot while the pot roast rests using a cornstarch slurry. This is one of the best ways to thicken a sauce.     How To Choose The Right Cut Of Meat For Pot Roast

    Pot roast isnt a specific cut of meat it’s more about the cooking method. You basically take a large chunk of tough meat and cook it with liquid until it is falling apart tender.

    A few cuts of meat that work great for Beef Pot Roast are:

  • Chuck Roast: This is my *preferred cut* for making instant pot roast beef. It’s tender and falls apart easily when slow-cooked. This is because this cut of meat is marbled with fat which adds flavor and juiciness when cooked down.
  • Brisket: This cut tends to be a little more pricey and has more tendons that need to be cooked for a long time to be tender. Be sure to slice against the grain for tenderness.
  • Round: This cut is from the rear leg of the animal. This is often called a rump roast or a bottom round. It’s leaner and dries out more easily.

    The Best Instant Pot Roast

    According to the USDAs Food Safety and Inspection Service , cooking meat without thawing is safe, but you must exercise caution while cooking frozen meat since it may get contaminated. As a precaution, make sure it is thoroughly cooked to avoid bacterial infection. When comparing frozen meat to fresh meat, it is common for the latter to take 50 percent longer to cook.

    How To Prepare A Roast For The Pressure Cooker

    Cooking a roast in an Instant Pot is quite easy and should take you little more than 10 minutes of prep time.

  • First off, we advise defrosting the meat.
  • Youll need to season your roast generously on all sides with your chosen seasoning. Simple salt and pepper are good on any meat but you can be more adventurous if you like. There are many recipes for different rubs and seasonings so we encourage you to explore those.
  • Add a couple of tablespoons of oil to the Instant Pot and set it to Sauté. Sear the meat quickly on all sides to get it nicely caramelized. This will help to seal the juices in and will also give it a lovely umami flavor.
  • Set the pot to high heat.
  • Pour in some broth, stock, wine, or the liquid suggested by your recipe. Some people use cola while others swear by ginger ale. The choice is yours. Meat done in the pressure cooker can be a little bland so be sure to use a well-flavored liquid. About a cupful is usually enough.
  • Add a sliced onion and a carrot for flavor too.
  • Cover and allow to cook for the correct time. Let it do a natural release for 10-15 more minutes and youre all set.
  • Remove the roast from the pot, check for doneness, cover, and allow to rest for 10 minutes before carving.
  • Remember to use the liquid in the pot to make a tasty gravy to serve with your roast. This can be done while the roast is resting.

  • Deglaze the pot: Add the rest of the gravy ingredients . Scrape the bottom of the Instant Pot with a wooden spoon to remove any bits that might be stuck on the bottom.
  • Add the roast and pressure cook until tender: If your roast is cut into 1 lb chunks, it shouldnt matter how large it was to begin with they will all cook in about the same amount of time. I cook mine for 60-65 minutes. Depending on the type of roast you have and how you like your meat cooked, you may want to add additional time.
  • Let the pressure release and add the vegetables: at this point you have the option to remove the roast if it is cooked and tender, and shred it while the vegetables cook, or just add the vegetables on top of the roast.
  • Once everything is cooked, let the pressure release again and serve: Letting the pressure release naturally, completely is the best way to ensure moist and juicy pot roast. Once the pressure is released, open it up and thicken the gravy on saute if desired.

    Instant Pot Pot Roast Experiment

    In our Instant Pot Pot Roast experiment, we pressure cooked 3 nearly identical chuck roast steak at High Pressure for 20 mins, 45 mins, and 75 mins with an Instant Pot Electric Pressure Cooker.

    Out of the 3 results, we enjoyed the 45-Minutes Instant Pot Pot Roast the most.

    It was overall the most well-balanced in terms of Meat Texture, Meat Juice, Meat Flavors, and Sauce. It was definitely the most delicious one!

    Toss the tri-tip with your favorite seasoned salt and grill until done. Sear the tri-tip, fat-side down, in a hot oven-safe pan coated with oil.
