When cooking mashed potatoes for roasts, I like my potatoes to take on the roast flavor. Brown Beef Roast In Instant Pot
Press Saute button to Sauté More function to heat up Instant Pot. It will switch to ON on the screen.
Wait until it says HOTon the screen .
*Pro Tip: Make sure Instant Pot is as hot as it can be in order to induce a Maillard reaction.
Add 1 tbsp olive oil in the Instant Pots inner pot. Ensure the whole bottom is coated with olive oil.
*Note: In total, there are 6 sides to a beef roast. We are browning 4 sides of the beef roast excluding both ends .
Pat dry the beef roast with paper towel. Generously season one side of the beef roast with kosher salt and black pepper.
Place the beef roast in Instant Pot .
Brown the first side for 4 minutes. Generously season the other side with salt and black pepper.
Brown that side for 3 minutes and 30 seconds.
Finally, brown the other 2 sides for 2 minutes and 30 seconds per side .
Set aside the browned beef roast.
Make Gravy & Serve Instant Pot Roast
Taste the sauce one last time and adjust the seasoning if necessary.
Mix 1 ½ tbsp cornstarch with 2 tbsp water, then mix it into the yummy pot roast gravy one third at a time until desired thickness.

You can easily prepare a pot roast using a frozen chuck roast when cooking in the Instant Pot. Unlike slow cookers, the Instant Pot will get hot enough in a short amount of time to safely cook frozen meat.
- Skip searing the meat, as you can not sear a frozen cut of meat.
- Place the frozen beef roast, salt, pepper, garlic, and onion powder inside the pressure cooker.
- Pour in beef stock around the roast, then top the roast with horseradish.
- Cook on high pressure for 30 minutes per pound For a 3 pound roast that would be 90 minutes.
Why Do You Cut The Roast In Thirds
Cutting a roast into smaller pieces means you can get it on the table more quickly!
In the pressure cooker, the main factor that determines how long meat needs to be cooked is the thickness. Cutting in in thirds helps it to be able to cook faster since it reduces the distance from the middle to the edges.
Plus, when you cut the roast, its easier to fit in pot and easier and quicker to brown.

Firm Carrots Yes Please
To make sure the carrots stay whole, cut them up in really big chunks . For firmer carrots, dont add them in with the meat. Instead, cook the meat until done, remove from the pressure cooker and then pressure cook the carrots in the remaining sauce for 5 minutes on high.
You can start with large carrots which you cut down into chunks, or you can make your life even easier by starting with baby carrots. P.S. ==> the same goes for potatoes.

Can I Freeze This
Yes, this pork roast can easily be frozen to be used for another meal. Place your leftovers and a freezer safe container or ziplock freezer bag and store in the freezer. We recommend using it within 3 months of storing.
When you are ready to serve again, thaw in the refrigerator overnight. Reheat in the microwave for another easy meal.
How Long To Cook Pork Roast In Instant Pot:
After browning the pork roast in the instant pot remove from the instant pot with all the brown pieces. Then add the pork roast, vegetables and seasoning to the instant and seal.
Cook the pork roast for about 30 minutes to 35 minutes and allow for the instant pot to do a natural release for about 10 minutes. After doing a quick release, remove the pork roast and vegetables and make the gravy.
Whisk in the cornstarch slurry to thicken the gravy. Making the pork roast in the instant pot takes less than time than making in the slow cooker or in the oven.
