Pot roast refers to a beef dish where a large chunk of beef is slowly cooked in moist heat. The meat is often cooked along with vegetables like carrots or potatoes, and either served as-is or with warm bread.

Pot roasts traditionally involve a large pot and hours of simmering, but things have changed since the advent of pressure cookers. Tender, meat that falls apart is now a result of just one hour of cooking without much supervision.

How Long Does It Take To Cook Pot Roast In A Pressure Cooker

The time it takes to cook pot roast in an Instant Pot will vary depending on how large your piece of meat is.

As a general rule, when cooking beef roasts in a pressure cooker, assume 20 minutes of cook time for every pound of meat.

You must understand that the time shown above is the actual cooking time, not the total time the recipe will take. For the total time needed, consider the time recommended to bring the beef to room temperature , searing time, and the times required to release pressure built up inside the pressure cooker.

For a 3-pound piece of beef, the total time required will be about 2 hours and 30 minutes. This includes the time to bring the beef to room temperature , searing time, and the cook time required inside the pressure cooker.

I know 2 hours and 30 minutes might seem like a long time, but for ultra-tender and juicy beef, we need all of it.

The great news is that a pressure cooker makes much quicker work of pot roast compared to a slow cooker, oven, or when it is cooked on the stove-top.

Now, I mentioned there was extra time for bringing the beef to room temperature. After testing this pot roast recipe in our kitchen, we found that if you start with beef straight out of the refrigerator, the roast doesnt become as tender as when you give the beef some time out of the fridge so that it comes up to room temperature before cooking it.

Know when roast is done. Roast is different than a steak in that you wont be looking at your digital thermometer to gauge how done your steak is especially since this roast is cooking in a pressure cooker, so you wont be able to just open it to check your progress. Your roast should be done after 45 minutes at high pressure, with a natural release.

After the pressure releases on its own , remove the pressure cooker lid, and test the roast with a fork, lightly pulling on the meat with the fork tines. If the roast is soft, and starts to shred with light pressure, youre done!

If your roast isnt done. If your roast is a bit large, or you didnt get a great seal, you might need to add a bit more cooktime. In the rare case its not tender after 45 minute pressure cook time, try an additional 5 minutes at high pressure and you should be all the way there.

But were not done with that trusty sauté function just yet! Once youve removed the onions, garlic and leeks, Use the sauté function to sear each side of your chuck roast.

  • Plug in the IP with insert set in place.
  • Rub both sides of roast with salt, pepper and garlic powder and place in the hot skillet to sear, 3-4 minutes on each side. Transfer seared roast to the slow cooker and place on top of the apples and squash.
  • Press SAUTE and add the oil. When the oil is hot, add the seasoned roast searing to brown on all sides, about 5-7 minutes. Remove the roast from the IP and set aside.
  • Place apples and squash on the bottom of the IP.
  • Return the browned roasted to the IP and set on top of the apples and squash.
  • Combine the cider, vinegar, ginger and brown sugar and pour alongside the roast.

    How To Cook A Roast In The Instant Pot

  • Cut your boneless chuck roast in half. Season one side of each half generously with salt. Set your Instant Pot to saute mode and add vegetable oil. Once hot, add one-half of the roast to the pot salted side down. Sear for 4 minutes, then flip and sear the opposite side for another 4 minutes. Remove, set aside, and repeat with the other half of the roast.
  • Add more vegetable oil to the pot along with minced garlic and onion. Saute for 3 to 4 minutes, stirring often, until soft and fragrant. Then, add red wine. Saute for another 5 minutes, stirring frequently, until the liquid of the wine reduces by half. Return both halves of the roast to the pot along with beef broth, tomato sauce, rosemary, thyme, and salt and pepper.
  • Stir together and submerge the roast in the liquid. Add the lid back to the pot and set the timer for 60 minutes. Then, let it naturally release the pressure for 20 minutes. After 20 minutes, you can release the vent to get rid of any excess steam before removing the lid. Remove the meat from the pot and set aside.
  • Skim the top of the liquid with a ladle to remove any excess fat, and discard. Then, add cornstarch to beef broth and stir until combined. Slowly add the cornstarch slurry to the Instant Pot and stir until the mixture thickens. Pour the sauce into a serving dish to use as gravy over your roast.

  • Season meat with salt and pepper.
  • Select the sauté function, add 1 tablespoon oil to the bottom of the pot, and wait until it says hot. Then sear the meat for 5 minutes on each side till browned.
  • Use tongs to remove browned beef from the pot and set it aside. Add remaining oil, use a spatula or wooden spoon to scrape the bottom of the insert to remove any bits of meat stuck on.
  • Sauté the onions for 5 minutes before stirring in the garlic for 30 seconds. Cancel the sauté function and deglaze with 2 tablespoons of beef broth.

    • Tallow – 1 tablespoon of tallow, extra virgin olive oil, or bacon drippings for searing the roast.

    • Kosher Salt – 2 teaspoons of Kosher salt or 1 ½ teaspoon of regular salt.
    • Pepper – ½ teaspoon of ground black pepper.
    • Onion – 1 cup of diced yellow or white onion.
    • Garlic – 4 cloves of garlic crushed.
    • Beef Broth1 cup of beef broth.

    What Do I Serve With Pot Roast

    Roast with potatoes and carrots are the classic combination. This recipe cooks up small potatoes along with carrots. So the beauty of this recipe is that you have everything you need to make a complete meal out of it.

    However, Ive made those steps optional so if you prefer your roasts with mashed potatoes, its easy to make the switch. When cooking mashed potatoes for roasts, I like my potatoes to take on the roast flavor. Therefore, I generally follow my mashed potatoes recipe but just cook them in a steamer basket above the juices in the cooking pot.

    Also, in my house, I cant get away with making a roast and not making Yorkshire. My family prefers the Betty Crocker version Ive been making for years however, the next time I make roast Im planning to try this Yorkshire Pudding recipe, which is similar but less likely to deflate.
