Are you ever worried about overcooking your roast in a pressure cooker? If so, be sure to read this article to learn how to avoid it. A pressure cooker is a great way to cook large meals quickly and efficiently.

However, like any other kitchen appliance, it can also be dangerous if not used correctly. When using a pressure cooker, always wear an oven mitt and use a clear plastic bowl as a counter to prevent your roast from burning.

Many people are afraid of adding too much water or salt to their roast. However, these ingredients can actually help keep the roast from sticking and over cooking. In fact, adding just 0.5 1 teaspoon of salt will do the trick. If you want your roast to be cooked evenly throughout, add all of the ingredients at once rather than stirring later on.

Instant Pot Gravy Recipe

Making gravy can be intimidating.

For this recipe, I make a quick roux, or butter-flour paste, in the Instant Pot itself. To know how much roux to make, you can use a ratio of 1.5 tablespoons of flour and butter for each cup of liquid from the cooked meat.

After removing the meat, liquid, and veggies, turn the pot back to Saute and add the butter and flour, stirring together into a paste.

As the paste cooks, it will begin to bubble and spread out on the pan. If its too floury and not pasty, add a little more butter.

You will see it turn a darker color and move around the pan more easily when it is cooked. Then, add the liquid back into the pot and stir constantly until the gravy thickens.

If, after several minutes, the gravy doesnt thicken, sprinkle one spoonful of flour into the mix and whisk until it has dissolved. Once it has thickened to the right consistency, add salt and pepper to taste and serve immediately.

How To Make A Pot Roast In The 3 Qt Mini Instant Pot

My pot roast was 2.6 lbs. and I was a bit concerned if it would fit. No worries there, all I had to do is cut it in half.

For this recipe, all you need is your roast, salt, and pepper to taste and sauce of your choice. Whether you choose Chuck, sirloin or whatever cut you prefer, as mentioned we used chuck roast and it was 2.6lbs.

My husband picked up a 14.2 oz. of P.F. Changs Mongolian-style BBQ sauce. It was super! The secret is in the sauce.

After I cut the roast in two, seasoned both sides with salt and pepper, I added one cup of water to the pot, placed the meat on the trivet, and dumped the sauce on top. You can add onions, or peppers too if you like. I set the pot to the High Pressure/Pressure manual for 45 minutes. I let it naturally release and removed the roast to a platter to cool down a bit.

In the meantime, I had cut up some baby red potatoes and seasoned those with salt, pepper, and a little balsamic glaze. I added one cup of water to the pot, placed it down the trivet, and dumped my potatoes on top. Set to High Pressure again for 11 minutes and had some perfect potatoes to go with our roast.

The roast was mouth-watering tender and delicious.

What Kind Of Roast Should I Buy

There are dozens of cuts of meat, and different stores sell different types at different times, so it can feel overwhelming.

But, knowing two things will make it easy to get a piece of meat that will make a great roast.

First, look at the label. Most stores include an icon or label indicating what its suited for, and you want to pick something good for a pot roast, braising, or slow cooking.

Second, look at the name. Anything with roast, chuck, round or rump will provide a nice sized, well-flavored meat.

My go-to cut is the chuck roast. It has nice marbling which, as it dissolves, helps the meat break down and become more flavorful and tender. Its also on the cheaper end of the cuts regularly available in the store, which is a total bonus!

How To Make Pot Roast In The Pressure Cooker

How To Make Pot Roast in the Instant Pot

1. Start by cutting your chuck roast into 4 equal pieces. Then, sprinkle with the seasoning and rub it all over each piece of beef.

2. Switch on your instant pot and set it on sauté. Add oil, then brown each piece of beef on all sides.

I work in 2 batches to make sure I have enough space to turn the meat and to keep it from getting soggy vs browning.

3. Once the beef is browned, remove it from the instant pot. Add the tomato paste and cook it for around 30 seconds. Then, stir in the beef broth.

Youll want to simmer this until the tomato paste has dissolved into the broth. Youll also want to scrape any browned bits off the bottom of the pot, otherwise they could trigger the burn warning during pressure cooking!

Finally, season with Worcestershire sauce and add the pieces of beef back into the pot. Seal the lid and pressure cook for 50 minutes.

4. Once the first pressure cooking time is up, youll want to switch off the instant pot and leave it alone for 5 minutes to do a short natural release.

In the meantime, prepare the vegetables .

Manually release any remaining pressure, open the pot and carefully place the prepared vegetables on top of the beef. Seal the lid again and pressure cook for 5 more minutes.

5. After another 5 minute natural pressure release, release the remaining pressure manually and open the lid.

Remove the vegetables and the beef and set it aside on a warm platter, tented with foil.

Immediately serve the gravy over the meat and vegetables!

How To Make Our Instant Pot Texas Roadhouse Pot Roast Recipe:

When you are ready to make this Texas Roadhouse copycat recipe, start by pouring the beef broth into the bottom of the Instant Pot.

Then, take the chuck roast out of the packaging and season all of the sides with salt, pepper, and garlic powder.

After the roast has been well seasoned, place it in the bottom of the Instant Pot along with placing the diced onions, diced green peppers, diced celery, and minced garlic on the roast and all around it in the Instant Pot.

Next you will pour the tomato sauce, BBQ sauce, Worcestershire sauce, and bouillon cubes on top of the roast.

Once all of the sauce has been added to the roast, top it with the dried thyme and rosemary.

Now, place the lid on top of the Instant Pot and then make sure the valve is in the SEALING position.

COOKING NOTE: We pick the time based on the weight of the meat. You will cook the meat for 20-25 minutes per pound of meat.

After the timer is done, let the Intant Pot do a NATURAL RELEASE of the pressure in the Instant Pot. You will know it has all been released after the pin drops down.

Feel free to let the roast sit in the Instant Pot on the warm setting for a few hours as it will only add to the tenderness of the roast!

Once you are ready to serve, remove the roast from the Instant Pot, slice it, and serve it with your favorite sides!

How To Make The Best Pot Roast Gravy

  • After removing the pot roast and vegetables from the Instant Pot, set it to sauté and add ½ cup of water to the concentrated cooking liquid in the bottom of the pot. Taste and if needed, add additional water to dilute as desired.
  • In a small bowl, whisk together the water and cornstarch and whisk the slurry into the cooking liquid. Then, simmer the gravy for about 5 minutes, or until it is thickened to your liking.

If the gravy is not as thick as youd like after simmering, mix together an additional 1 tablespoon water with 1 tablespoon cornstarch and whisk it in to the gravy to thicken it further.

Storage & Reheating Tips

Leftover pot roast is a meal to look forward to, and can be even more flavorful on the second and third day. To store in the fridge or freezer and reheat:

  • Refrigerator: Store leftover pot roast in an airtight container in the refrigerator for up to 3 days.
  • Freezer: Cool completely, and then store pot roast in an airtight container in the freezer for up to 3 months. I like to freeze the roast, vegetables and gravy in individual portions for quick meals later on. Thaw overnight in the refrigerator before reheating.
  • To Reheat: The best way to reheat leftover pot roast is to heat it in a pot on the stove, covered, over medium heat, adding a little broth or water as needed to thin the gravy. Stir it often to help it heat evenly. You can also reheat pot roast in your pressure cooker using the sauté setting, or in the microwave.

Deglaze The Instant Pot

Then, add 1 cup of chicken or beef broth to the hot instant pot, whisking to get the browned pieces from the bottom of the pan blended in. This is the process of deglazing, which adds SO much flavor to the pot roast and will be the base for the gravy. Once deglazed, place the roast back into the instant pot.

  • Season and sear: Cut your roast beef into roughly 1 pound pieces and coat them with the seasoning blend. Meanwhile, turn your Instant Pot to saute, and brown each piece in oil on every side. You can skip this step, but I find it does add a lot of flavor and helps to keep the juices in the meat.
  • Remove the beef and cook the onions: cooking the onions adds another layer of flavor to our gravy! Then add the garlic and cook just a minute, so that it doesnt burn.
  • Deglaze the pot: Add the rest of the gravy ingredients . Scrape the bottom of the Instant Pot with a wooden spoon to remove any bits that might be stuck on the bottom.
  • Add the roast and pressure cook until tender: If your roast is cut into 1 lb chunks, it shouldnt matter how large it was to begin with they will all cook in about the same amount of time. I cook mine for 60-65 minutes. Depending on the type of roast you have and how you like your meat cooked, you may want to add additional time.
  • Let the pressure release and add the vegetables: at this point you have the option to remove the roast if it is cooked and tender, and shred it while the vegetables cook, or just add the vegetables on top of the roast.
  • Once everything is cooked, let the pressure release again and serve: Letting the pressure release naturally, completely is the best way to ensure moist and juicy pot roast. Once the pressure is released, open it up and thicken the gravy on saute if desired.

    How Long To Cook Roast In Instant Pot

    Using this recipe, it takes 60 minutes at high pressure to cook a 3-pound pot roast in an Instant Pot. Add to that the time that the pot takes to come to pressure and the time needed to release the pressure, and you’ll need approximately 90 minutes to make a roast in the instant pot.

    In the oven, a pot roast cooked low and slow takes from 3-4 hours, and a slow cooker pot roast takes at least 5 hours. Using the Instant Pot to make pot roast is so much quicker!

    If your roast is larger than 3 pounds, you should cook it at high pressure for 20 minutes per pound.
