Instant Pot Pork Roast: A Recipe For A Quick Delicious Dinner

How to Cook a Pork Roast in the Instant Pot

Despite being a BBQ girl at heart, I use my Instant Pot when I want to whip up recipes quickly and with minimum hassle.

Although I was inspired by my smoked pork butt recipe, I tailored this Instant Pot pork roast recipe to suit the slow cooker and its particular method of cooking.

In this post, I will show you how to prepare a delicious pork roast with minimal hassle. Let’s begin!

Cooking The Roast Until It Shreds

This roast is sliceable, which isnt usually how you want a pork shoulder but the pressure cooking renders such a tender roast that you can eat it like you would a normal roast. If you want a pork roast that shreds, you will need to cook it another 60 minutes. You have two choices with this recipe and both are great!

Pressure Cook Pork Roast

The last step before you pressure cook your pork roast is to put everything back into your pot! Pour the onions and garlic into the wine sauce, stir and then place the Instant Pot metal trivet into the bottom of the pot.

Add in your sprigs of rosemary and place the pork roast on to your metal trivet. Thats IT! Cover your Instant Pot, seal it, and cook on high pressure for 70 minutes.

How Long To Cook Pork Roast In The Instant Pot

When you roast a pork butt in the oven, it takes about 40 minutes per pound. The Instant Pot is MUCH quicker.

In the Instant Pot, you should cook a pork butt for 15 minutes per pound. What does that mean? That means that you set the Instant Pot to pressure cook for 15 minutes per pound. If the roast is 3 pounds, you set it to pressure cook for 45 minutes.

The roast ends up being in the Instant Pot for longer than just those 45 minutes though. Before the pressure cooking starts, the Instant Pot spends time coming up to temperature. That can take as long as 10-15 minutes.

Then, after the pressure cooking time is up, the pressure needs to be released. I do what is called a natural release for 10 minutes. A natural release happens if, when your pressure cooking time has reached zero, you do nothing. Basically, the heater of your Instant Pot stops heating at that point, and then the pressure inside slowly dissipates.

I do the natural release for 10 minutes whenever cooking meat in the Instant Pot because a quicker release results in a drastic change of temperature that can make meat seize up and get tough.

So do the natural release for 10 minutes and then switch the valve to Venting and let the remaining pressure escape. You then open up the Instant Pot and take out the roast.

What Do I Need To Make This Instant Pot Pork Roast

A lot of recipes claim to be easy. But trust me, theres no exaggeration when I say that this is the easiest Instant Pot pork roast recipe youre ever going to come across. It only takes a handful of ingredients, and chances are, you have a lot of them in your pantry already!

  • Fresh rosemaryAdds a strong lemony-pine flavor to your pork roast
  • Garlic powder and onion powderBasic spices to bring out the flavor of your pork roast

How Long To Cook Pork Roast In Instant Pot:

After browning the pork roast in the instant pot remove from the instant pot with all the brown pieces. Then add the pork roast, vegetables and seasoning to the instant and seal.

Cook the pork roast for about 30 minutes to 35 minutes and allow for the instant pot to do a natural release for about 10 minutes. After doing a quick release, remove the pork roast and vegetables and make the gravy.

Whisk in the cornstarch slurry to thicken the gravy. Making the pork roast in the instant pot takes less than time than making in the slow cooker or in the oven.

Is It Ok To Cook Chicken Not Fully Defrosted

Cooking chicken not fully defrosted can be a safe and healthy option, but there are some caveats to taking this approach. First, it is important to make sure that the chicken has had enough time to warm up before cooking.

Second, always cook chicken over medium-high heat, not low or medium heat, as this will cook the meat evenly. Finally, avoid using any acidic ingredients such as vinegar or lemon juice as these may cause the bird to brown too quickly.

  • 1 – 2pounds pork shoulder
  • 2large russet potatoes, cut into large chunks
  • 8large cremini mushrooms, roughly chopped
  • 2carrots, cut into large chunks
  • 2tablespoons unsalted butter
  • 2tablespoons regular soy sauce
  • 1tablespoon grapeseed oil or olive oil
  • 6cloves garlic, minced
  • 1cup unsalted chicken stock
  • Kosher salt & ground black pepper to taste
  • Optional Garnish: Italian parsley, finely chopped

Thickener

  • 2tablespoons cold water

How Long Does Frozen Chicken Take At 350

Cooking chicken not fully defrosted can create bacteria that can cause food poisoning. If you are cooking chicken not fully defrosted, be sure to wash your hands and cook the chicken in a covered pan until it is cooked through.

Frozen chicken can defrost faster in cold water than in hot water. This is because cold water has a lower boiling point than hot water. Frozen chicken will defrost more quickly in cold water than in hot water, making it easier to cook and eat.

Brown Veggies + Pork Roast

Now its time to get the flavors flowing. In this step, you are going to build your base of flavor for the whole dish . You want to saute your veggies first. Add your olive oil to the Instant Pot and when it is fragrant, add your veggies. Saute them up for about 2-3 minutes or until your onion is translucent.

Remove your veggies, add more olive oil, and then sear your pork roast for 2-3 minutes on each side. When you are searing meat in the Instant Pot it is pretty common that you will get the HOT or BURN notice. Dont panic. You want your meat to brown and you want the brown crispies to form in the bottom of your Instant Pot. It will just add a ton of flavor to your sauce-y sauce.

How To Make Pork Roast In The Instant Pot:

  • Step 1 Turn the Instant Pot on the sauté setting. Spread the olive oil out onto the bottom of the instant pot insert.
  • Step 2 Season the pork roast with the salt and pepper and then brown the pork roast on both sides.
  • Step 3 Remove the pork from the instant pot and use a wooden spoon to get all the brown bits off the bottom of the instant pot insert.
  • Step 4 Add the chicken broth, browned pork roast, carrots, minced garlic and Italian seasoning to the instant pot.
  • Step 5 Seal and cook on high pressure for 35 minutes.
  • Step 6 After the cook time, allow the pressure to release naturally from the instant pot for 10 minutes.
  • Step 7 Then do a quick release to release the remaining pressure from the instant pot.
  • Step 8 Remove the pork and carrots. Switch the instant pot to the sauté setting.
  • Step 9 Combine the cold water and cornstarch together in a small bowl.
  • Step 10 Whisk the cornstarch mixture into the instant pot and heat for 2-3 minutes until the sauce has thickened to a gravy consistency.
  • Step 11 Slice the pork on a cutting board and serve the pork and carrots topped with the gravy from the instant pot. Enjoy!

Can I Freeze This

Yes, this pork roast can easily be frozen to be used for another meal. Place your leftovers and a freezer safe container or ziplock freezer bag and store in the freezer. We recommend using it within 3 months of storing.

When you are ready to serve again, thaw in the refrigerator overnight. Reheat in the microwave for another easy meal.

Does Thickness Of Pork Butt Matter

Yes and No. Normally, your meats thickness plays a major role in determining the best pressure cooking time.

With this Pork Roast Instant Pot recipe, since were slicing the pork butt before pressure cooking, your pork butts original thickness wont matter.

This works because were using Pork Butt Meat with nice marbling. So, as long as youre able to cut your pork butt into 0.5-inch thick, youre good to go.

How To Crisp The Outside Of A Pork Roast

One drawback of the Instant Pot is that its a wet cooking method, which means that you dont get a crisp crust on the outside of your roast, even if you seared it at the beginning. The steam in the pressure cooker has made that not crusty. For sure. However, as long as you seared the meat really well in the beginning, that dark, caramelized crust will remain on any section of the roast that is not touching liquid.

Now, if you like a crisp crust on your roast youll need to use the oven after the Instant Pot has done its work I have instructions for that in the recipe below. Or you can read about it in my post How to Roast Pork Perfectly.

Basically, you let the pork rest for a bit. Then put it into the oven at a very high temperature for just 10 minutes. This will crisp up the crust.

FYI, if youre planning to shred the pork you really dont need to crisp it up in the oven first.
