To start, cut your chuck roast into pieces. Usually, 3 to 4 equal-sized pieces will fit easily in the Instant Pot. Next, youll get the beef browned and ready for pressure cooking:
Prepare the Beef: With the Instant Pot set to saute, brown the beef pieces. This should take about 5 minutes per side to get a nice, even sear. Once browned, remove the meat and set it aside.
Assemble the Roast: Pour in the beef broth to deglaze the pot. Use a spatula to scrape the bottom, lifting all those flavorful stuck-on bits. Next, turn off the pot and place the meat back in. Add the dressing and gravy mixes, butter, and pepperoncini. Now, for even more flavor, pour in the pepper juice, too!
Cook: Seal the lid and set the Instant Pot to cook on high pressure for 55 minutes. Afterward, youll need to leave the pot to release naturally for 15 minutes before venting the remaining pressure.

To thicken the liquid and turn it into a brown gravy, make a cornstarch slurry to add to it. To make the cornstarch slurry, mix 2 tablespoons cornstarch with 2 tablespoons water and stir until the cornstarch is dissolved and the water turns white. Then pour the cornstarch slurry into the liquid in the Instant Pot.
- SAUTE. Press the SAUTE button and stir the liquid with the cornstarch slurry until it thickens. This should take about 3 minutes but could take a little longer.

I will never make pot roast any other way!! I always add, onions, potatoes, carrots, corn and celery. Any veggie I can fit in the crock pot. So freaking good and the whole family loves it!
Ive made this recipe a number of times over the last 4 or 5 years. I think this tastes best with about half the amount of each seasoning packet and half the amount of butter. I have also tried multiple different add-ins such as pepperoncini juice along with minced garlic and sliced onions and carrots. The juice also makes a wonderful gravy to serve on top. This is in my rotation for sure and my boyfriend loves it!
This is my second time making this roast. I just made two for thanksgiving and there was nothing left. I added a bit of the pepperoncini juice once I added all the ingredients. I also seasoned with salt and pepper and seared before putting in crockpot. Since the crockpot were going to be overcrowded once I add the potatoes, carrots, celery and onion, we decided to cook them in a pan with just butter and let the steam cook them. Once they were tender we added to the crockpot. It was a hit for sure!

What About The Salt
- Mississippi Pot Roast can be a bit salty, so here are some tips to help with that:
- Use unsalted butter
- Use low or no sodium broth .
- Try to find low sodium ranch dressing mix, or make a batch of my Homemade Ranch Dressing Mix and dont add salt .
- Rinse off the pepperoncinis and use 1/2 the amount of the juice from the jar. You can always add more after cooking if you want to.
Can I Start Out With A Frozen Roast In My Instant Pot Or Ninja Foodi
Yes. Ive personally never tried it, but it is possible.
The thing to keep in mind is that you cant sear the meat, so youd miss out on forming extra flavor through the Maillard reaction. Also, the roast will take 1/3 of the time longer to cook, plus the pot will take a lot longer to come to pressure.
Thats being said, I HAVE cooked frozen ground beef in the instant pot before and it worked out well. Im suspecting any difference between them is that one is ground and the other is whole muscle fibers and it might create a difference in the texture of the roast if cooked from frozen.
Its also not recommended to cook a whole muscle roast from frozen in the slow cooker because the meat will be left at an unsafe temperature for too long.

Cook Time For Mississippi Pot Roast
The total cook time for this recipe when pressure cooking is 75 minutes . I know that sounds like a lot, but I’ve found that to get a roast tender, around 90 minutes the magic number. With more than 90 minutes your roast gets tough, less than 90 minutes your roast might not cook through.
Less then 90 minutes also doesn’t give the Instant Pot time to break up the fat/connective tissue in the meat. Breaking that up is what makes the roast tender. There’s a common misconception that the longer you cook the more tender a roast getsnot always true! It can get tough if overcooked.
If you’re wondering why your pot roasts are coming out tough, it might be that you’re not hitting the right time. If you’re cooking any kind of roast , 90 minutes is the number I’d aim for.
Recipe Notes And Tips
- Youll want to use butter when making this recipe and not margarine, which is mostly oil. The butter brings a key flavor to the mix.
- Dont add any extra liquid to the Instant Pot! The meat will not be fully covered, but the butter on top will aid in flavor as well as cooking the beef. The beef will also release its own juices while cooking.
- When ready to serve use a slotted spoon and carefully remove the pieces of meat so the pepperoncini dont fall apart. Then use a ladle to scoop up the juices and spoon them on top of each plate.
- To thicken the gravy: When youre done cooking the roast if the gravy is not thick enough use a slotted spoon to remove the meat and peppers. Then mix together 2 tablespoons of cornstarch with ¼ cup of cold water and stir it into the gravy in the bottom of the Instant Pot. Turn the pot on sauté and let the gravy heat for an additional 5 minutes while it thickens.

Can I Use A Gravy Packet Instead Of The Au Jus Packet
To make this dish and call it Mississippi Roast, I would say no, you cant. Basically, because the gravy packet usually has thickeners , the drippings after cooking wont be the same. However, if all you had on hand were gravy packets, you could try making my Instant Pot 3 Packet Roast, which uses a gravy packet and is equally delicious as this succulent beef roast recipe!
Incidentally, after trying this recipe and loving it, and you were wondering if you could make it with chicken instead, you most definitely can. Just sub in the same amount of chicken as it calls for beef. I did that same thing as with my 3 packet roast, I also made a 3 Envelope Chickenas well. All of these are amazingly delicious!
