How Long Does It Take To Cook Pot Roast In A Pressure Cooker

The time it takes to cook pot roast in an Instant Pot will vary depending on how large your piece of meat is.

As a general rule, when cooking beef roasts in a pressure cooker, assume 20 minutes of cook time for every pound of meat.

You must understand that the time shown above is the actual cooking time, not the total time the recipe will take. For the total time needed, consider the time recommended to bring the beef to room temperature , searing time, and the times required to release pressure built up inside the pressure cooker.

For a 3-pound piece of beef, the total time required will be about 2 hours and 30 minutes. This includes the time to bring the beef to room temperature , searing time, and the cook time required inside the pressure cooker.

I know 2 hours and 30 minutes might seem like a long time, but for ultra-tender and juicy beef, we need all of it.

The great news is that a pressure cooker makes much quicker work of pot roast compared to a slow cooker, oven, or when it is cooked on the stove-top.

Now, I mentioned there was extra time for bringing the beef to room temperature. After testing this pot roast recipe in our kitchen, we found that if you start with beef straight out of the refrigerator, the roast doesnt become as tender as when you give the beef some time out of the fridge so that it comes up to room temperature before cooking it.

Storage & Reheating Tips

Leftover pot roast is a meal to look forward to, and can be even more flavorful on the second and third day. To store in the fridge or freezer and reheat:

  • Refrigerator: Store leftover pot roast in an airtight container in the refrigerator for up to 3 days.
  • Freezer: Cool completely, and then store pot roast in an airtight container in the freezer for up to 3 months. I like to freeze the roast, vegetables and gravy in individual portions for quick meals later on. Thaw overnight in the refrigerator before reheating.
  • To Reheat: The best way to reheat leftover pot roast is to heat it in a pot on the stove, covered, over medium heat, adding a little broth or water as needed to thin the gravy. Stir it often to help it heat evenly. You can also reheat pot roast in your pressure cooker using the sauté setting, or in the microwave.

What To Serve With This Instant Pot Pot Roast

Given the fact that this pot roast is rather hearty, I would pair it with a light salad! This simple tossed green salad would be the perfect appetizer.

You could also serve with a side of steamed broccoli to add a little color. Crunchy broccoli will contrast nicely with the tender meat!

You might also consider serving your roast beef over a bed of creamy mashed potatoes to help soak up all that gravy, or you could use a good crusty bread! Pick up your favorite baguette at the store or make these quick and easy homemade breadsticks!

Want To Be Sure Theres Enough Gravy

My family has come to associate roasts with Yorkshire Pudding, and they often request mashed potatoes along with it. When these sides are on the menu, I know well need enough gravy to fill a small swimming pool.

Therefore, this recipe is written to make a big batch of extra gravy. The notes section of the recipe also contains instructions for reducing the liquids if you dont want to make as much gravy.

Doubling the liquids in this doesnt change the cook time, but it will take a little longer to come to pressure. Just be sure you dont fill your pressure cooker above the max fill line.

In this pot roast recipe, simple ingredients come together to make a meal thats flavorful and satisfying.

    • Beef Chuck Roast: The best kind of roast to use for pot roast is a boneless beef chuck roast. The marbling in a chuck roast will make your pot roast extra tender and juicy.
    • Salt & Pepper: To season the beef roast.
    • Olive Oil: For browning the meat and sautéing the onion.
    • Onion & Garlic: A yellow onion and fresh garlic bring delicious flavor to the pot roast.
    • Tomato Paste: Adds savory flavor and thickens the gravy up just a bit.
    • Worcestershire Sauce: Adds umami flavor and brings out the beef flavor. You can substitute balsamic vinegar if you prefer.

    • Thyme: I season this pot roast with thyme because it complements the beef flavor. You can use fresh thyme or dried thyme.
    • Carrots & Potatoes: The classic vegetables for pot roast, carrots and baby potatoes make this meal hearty and comforting.
    • Cornstarch & Water: To make a cornstarch slurry, which is used to thicken the gravy after the roast cooks.

How To Cook Pot Roast In An Instant Pot

Cooking frozen pot roast. Generally, you dont need to worry about changing your cooktime much in the instant pot if using a frozen roast as it will thaw rapidly as the pot comes to pressure. This means you dont need to change the time you set your Instant Pot to when you cook but it will cook longer so youll need to plan for extra time if youre hungry waiting on dinner.

Unfortunately, it is hard to give an exact time for the pot to come to pressure, since things like altitude, humidity, and your roasts shape can all change how quickly the Instant Pot comes to pressure but plan on around an extra 30-40 minutes for large roasts. For very large, thick chuck roasts, I increase the programmed Instant Pot cook time to 55 minutes instead of 45 minutes, as I find the texture is more tender with a little extra cooking time at pressure.
