How To Make Pork Roast In The Instant Pot:

  • Step 1 Turn the Instant Pot on the sauté setting. Spread the olive oil out onto the bottom of the instant pot insert.

How To Cook Pot Roast In The Instant Pot

Theres no need to save slow cooked chuck roast recipes for the weekend! Easy Instant Pot Pot Roast is ready in under 2 hours. Smaller cuts of meat means more browning and a quicker cooking time. Balsamic vinegar, tomato paste, and fresh herbs create a flavorful gravy. Layer the carrots and potatoes correctly for perfectly tender veggies in this one-pot meal.

One quick tip before you start! Choose the right cut of beef AND be sure to divide the roast into 4 chunks it will cook faster, plus youll create more surface area for browning.

  • Divide the roast into 4 chunks, pat dry, and season with salt and pepper.
  • Brown the beef in batches. It isnt necessary to brown all sides, but get a good sear on at least 2 sides.
  • Remove the beef from the pot, then add the chopped garlic. Cook 1 minute, or until very aromatic.
  • Deglaze the pot with vinegar, making sure to gently scrape up all those flavored browned bits! Turn off Saute function.
  • Whisk together broth, tomato paste, and coconut aminos until smooth.
  • Return beef to the pot, then pour in broth mixture. Add bay leaf and thyme.

    The Best Instant Pot Pot Roast Recipe

    In our photos, we are using a 6-quart Instant Pot, which is an electric pressure cooker.

    Other brands make electric pressure cookers, too. If you own one of them, you should be able to use this recipe without any problems .

    Step 1, Season the beef and bring it to room temperature. Ive already touched on this above, but Ill quickly do it again, here.

    After testing, we found that when we left the beef out on the counter to come closer to room temperature before cooking it, the pot roast was much more tender at the end of the cooking time.

    I also love that the beef gets a chance to sit with the salt for about an hour before cooking. In this time, the salt seeps into the meat and helps to season and tenderize it.

    Step 2, Brown the beef on all sides. By browning the beef on all sides before cooking at high pressure, we add color to the meat and add lots of flavor to the pot.

    For a one-pot meal, brown the beef right in the pressure cooker using the Saute function. If your pressure cooker does not have this function, simply brown the beef in a heavy pan on the stove.

    After browning, I remove the beef so I can move on to the veggies.

    Step 3, Lightly brown vegetables. For extra flavor, we add onions, carrots, and celery to our pot roast, but I like to cook them in the bottom of the pot a bit first.

    Step 4, Deglaze the pot and place the beef and vegetables back in. By deglaze, I mean to add liquid and scrape the bottom of the pot until it is clean.

    How Long To Cook Roast In Instant Pot

    Using this recipe, it takes 60 minutes at high pressure to cook a 3-pound pot roast in an Instant Pot. Add to that the time that the pot takes to come to pressure and the time needed to release the pressure, and you’ll need approximately 90 minutes to make a roast in the instant pot.

    In the oven, a pot roast cooked low and slow takes from 3-4 hours, and a slow cooker pot roast takes at least 5 hours. Using the Instant Pot to make pot roast is so much quicker!

    If your roast is larger than 3 pounds, you should cook it at high pressure for 20 minutes per pound.

    Get That Perfect Sear

    But were not done with that trusty sauté function just yet! Once youve removed the onions, garlic and leeks, Use the sauté function to sear each side of your chuck roast.

    Start by adding olive oil to your Instant Pot, and then sear each side of the chuck roast for 3-4 minutes per side. The goal here is to get the outside of your roast nice and brown.

    The time it takes to cook pot roast in an Instant Pot will vary depending on how large your piece of meat is.

    As a general rule, when cooking beef roasts in a pressure cooker, assume 20 minutes of cook time for every pound of meat.

    You must understand that the time shown above is the actual cooking time, not the total time the recipe will take. For the total time needed, consider the time recommended to bring the beef to room temperature , searing time, and the times required to release pressure built up inside the pressure cooker.

    For a 3-pound piece of beef, the total time required will be about 2 hours and 30 minutes. This includes the time to bring the beef to room temperature , searing time, and the cook time required inside the pressure cooker.

    I know 2 hours and 30 minutes might seem like a long time, but for ultra-tender and juicy beef, we need all of it.

    The great news is that a pressure cooker makes much quicker work of pot roast compared to a slow cooker, oven, or when it is cooked on the stove-top.

    Now, I mentioned there was extra time for bringing the beef to room temperature. After testing this pot roast recipe in our kitchen, we found that if you start with beef straight out of the refrigerator, the roast doesnt become as tender as when you give the beef some time out of the fridge so that it comes up to room temperature before cooking it.

    • Make in Advance This pork roast recipe makes the perfect freezer meal. You can place the ingredients in a freezer bag. Grab from your freezer to the instant pot.
    • Cut the veggies into large pieces Since the beef requires a longer cook time, cut all the vegetables into larger pieces so that they dont get too soft while cooking.
    • Dont use Flour for the Gravy I have found that cornstarch instead of flour works best to make the gravy for this roast. Cornstarch is flavorless so it thickens without changing the flavor of the droppings from the instant pot.

    • No Instant Pot? No Problem. Pot roasts can be made using many different cooking methods. If you dont have an Instant Pot, you can try our recipes for making pot roast in the slow cooker or in the oven .
    • Easy Freezing: If you have leftovers, roast can easily be shredded and frozen to eat at a later date. Just remove any vegetables and place in a Ziplock bag or a freezer-safe airtight container to freeze.     How To Make Instant Pot Pot Roast:

  • Season and sear: Cut your roast beef into roughly 1 pound pieces and coat them with the seasoning blend. Meanwhile, turn your Instant Pot to saute, and brown each piece in oil on every side. You can skip this step, but I find it does add a lot of flavor and helps to keep the juices in the meat.
  • Remove the beef and cook the onions: cooking the onions adds another layer of flavor to our gravy! Then add the garlic and cook just a minute, so that it doesnt burn.
  • Deglaze the pot: Add the rest of the gravy ingredients . Scrape the bottom of the Instant Pot with a wooden spoon to remove any bits that might be stuck on the bottom.
  • Add the roast and pressure cook until tender: If your roast is cut into 1 lb chunks, it shouldnt matter how large it was to begin with they will all cook in about the same amount of time. I cook mine for 60-65 minutes. Depending on the type of roast you have and how you like your meat cooked, you may want to add additional time.
  • Let the pressure release and add the vegetables: at this point you have the option to remove the roast if it is cooked and tender, and shred it while the vegetables cook, or just add the vegetables on top of the roast.
  • Once everything is cooked, let the pressure release again and serve: Letting the pressure release naturally, completely is the best way to ensure moist and juicy pot roast. Once the pressure is released, open it up and thicken the gravy on saute if desired.
  • How Long To Cook Pork Roast In Instant Pot:

    After browning the pork roast in the instant pot remove from the instant pot with all the brown pieces. Then add the pork roast, vegetables and seasoning to the instant and seal.

    Cook the pork roast for about 30 minutes to 35 minutes and allow for the instant pot to do a natural release for about 10 minutes. After doing a quick release, remove the pork roast and vegetables and make the gravy.

    Whisk in the cornstarch slurry to thicken the gravy. Making the pork roast in the instant pot takes less than time than making in the slow cooker or in the oven.

    How To Make It

    For the most part, this recipe is a cinch to prepare. Dont skip the browning stage of the instructions because it adds a ton of flavor to the recipe.

    Season the chuck roast on both sides with salt and pepper.
