What Kind Of Broth Should You Use

When making your mushroom gravy, the type of broth you choose to use is going to massively affect the flavor of the final dish.

If you really want to go fancy, you can use some homemade chicken broth, which would give it a rich and decadent flavor profile. Of course, not everyone has chicken broth sitting around in their freezer.

Packets or pouches of bouillon powder work just fine here, but feel free to use a bit more than the package recommendations, as this will lead to a stronger and more intense taste.

You could also use some pork broth instead, but just keep in mind that it will make the whole dish taste very porky. Chicken broth is a bit more neutral, so will help highlight the flavor of your pork chops and the mushrooms a lot better.

Is It Better To Cook Pork Chops Fast Or Slow

Cooking pork chops quickly vs. slowly is a question that has been asked by many people over the years. There are a few main reasons why cooking pork chops quickly vs. slowly may be better for you. First, when cooked quickly, pork chops can become dry and tough.

This is due to their high moisture content which can make them difficult to cook evenly and prevent them from being tender. Second, slow cooking allows pork chops to cook slowly and evenly, resulting in more tender meat that is slightly browned on the outside and cooked through inside.

Use Your Instant Pot To Brown The Pork Chops First

The first step to making these pork chops is to liberally apply the rub to all sides of the meat, and sear for 2 and ½ minutes on each side with the Instant Pot on saute mode and a little oil added. This searing really adds to the flavor profile. Then we remove the pork chops and set aside on a plate while we press cancel and add 1 cup of water and deglaze the bottom of the pot with a wooden spoon. This is simply scraping away all the bits, then we add a couple of tablespoons of bbq sauce to the water and stir it in good. Then the pork chops go into the liquid, the lid gets secured and the vent set to sealing. Now we pressure cook for 10 minutes. When the 10 minutes are up, we let the pressure naturally release which take 10-15 minutes. Once the pin drops we remove the lid and transfer the chops to a foil lined baking sheet and brush them with your favorite bbq sauce and into the broiler they go for 5 minutes. You can certainly skip the broiler part if you want, but it ads that great caramelization and flavor to the pork chops.
