This Instant Pot Chile Verde recipe calls for 10 tomatillos. I strongly recommend that you use fresh tomatillos and not canned. Tomatillos are found in your grocery produce section, and look like small, green unripe tomatoes wrapped in papery husks. For this recipe you will remove the stems and husks, wash the tomatillos well, then halve them. Youll also need three jalapeno peppers , and five cloves of garlic for the first phase.

To emulate the traditional method of roasting your tomatillos and peppers first, youll start by using the Saute function of a multi-functional pressure cooker. Heat some olive oil in the pot, then add the tomatillos, jalapenos, and crushed garlic. Saute, flipping once or twice, until lightly browned . If the garlic starts to brown sooner than the tomatillos and peppers, remove the garlic and continue to saute the rest.

As you can see, the tomatillos and jalapeno peppers are soft and their skins look nice and roasty.

Transfer the vegetables from the Instant Pot to a blender or food processor and puree with two cups of chicken broth until it becomes a smooth sauce.

Clean and dry the inner pot of the Instant Pot before moving on. Select the Saute function again, and heat some additional olive oil. Add boneless pork shoulder , chopped onion, chopped bell pepper, oregano, cumin, salt, and pepper to the pot.

Stir some chopped cilantro into the Chile Verde in the Instant Pot, and youre ready to serve!

  • Brown Chicken In Instant Pot

    First, press Saute button to Sauté More function to heat up Instant Pot. It will switch to ON on the screen.

    First, brown the first side of chicken for 3 minutes and 30 seconds, and brown the other side of the chicken for 3 minutes, then set aside the browned chicken thighs.

    *Note: You dont have to brown the remaining chicken thighs.

    How To Turn This Into A Freezer Meal:

    Place roast, onion, garlic, green pepper, tomatillos, jalapeno, salsa, green chilies, tomatoes, and cumin into a gallon-sized freezer bag. Place freezer bag into freezer and it will last up to 90 days.

    When ready to use, dump ingredients from bag into Instant Pot and add 1/2 cup chicken broth or water in with the frozen food. Place the lid on top, move the valve to SEALING, and press the MANUAL button. Set timer for 90-100 minutes .

    Do a NATURAL RELEASE when the timer is done I even like to let it sit in the Instant Pot for a few hours so that it falls apart so easily. Follow the rest of the instructions as written.

    The Instant Pot is a programmable pressure cooker with a slow cooker option that has recently seen quite a bit of popularity. Weve had some time to play with it and have fallen for it. They are sold just about everywhere, but if you dont have one, this recipe can be adapted to be used by any pressure cooker.

    Before we get to the recipe, lets briefly address one of the biggest misconceptions with pressure cookers. One of the coolest things about a pressure cooker is that you can cook food quickly. An example being that you can cook chicken breasts in under 8 minutes. Most people assume that when we program the cooker to cook for 8 minutes, the 8 minute countdown starts right away. Thats not exactly true.

    Cooking wont begin until there is enough steam pressure built up inside the pot. This takes a few minutes so dont worry if it doesnt seem like anything is happening at first.

    The second caveat to pressure cookers is that when the cook time is done, the pressure inside the pot needs to release before you open the lid. You have two options for that: allow the cooker to naturally release the steam or you can press the quick release. We usually do a combination of both let the cooker naturally release some of the steam for 5 minutes or so then press the quick release for the rest. We do this most of the time unless we are cooking something with a high liquid content . If theres lots of liquid in the pot, we go with the natural release.
