After everything is well seasoned, pour in the chicken broth trying to avoid directly pouring it onto the chicken to keep as much of the seasoning on the chicken and potatoes as possible.

Once everything is in the Instant Pot, place the lid on and turn the knob to the SEALING position. Then, press the MANUAL or PRESSURE button and set the timer to 13 minutes.

INGREDIENTS

Chicken Breasts It is best to use boneless, skinless chicken breasts for this recipe. If you have large chicken breasts, slice them down in smaller pieces so that they cook given the time provided.

And yes, you can use boneless, skinless chicken thighs instead of the chicken breasts if you prefer. Chicken thighs provide a lot of flavor and is sometimes preferred when cooking in an Instant Pot.

Baby Potatoes Sometimes called new potatoes these little potatoes are commonly found at grocery stores and Farmers markets. You can find them in yellow, red, and even sometimes purple varieties.

Just be sure that the potatoes are all about the same size. If not, cut larger potatoes in half or quarters before cooking.

Extra Virgin Olive Oil Although we dont consider this an extra ingredient in recipes, extra virgin olive oil is a necessity when making this Instant Pot Ranch Chicken & Potatoes recipe.

The oil will help the seasonings adhere to both the chicken and potatoes which gives this meal the majority of its flavor.

Dry Ranch Dressing Mix You can purchase packets of dry ranch dressing mix in the dressing aisle at the grocery store. You can sometimes find it in bigger, bulk sizes as well.

Homemade Dry Ranch Dressing Mix

However, it is also easy to make Homemade Dry Ranch Dressing Mix with just a few spices. Here is how I make our own: Dry Ranch Dressing Mix Recipe.

  • IF the sauce is too thick, stir in a bit of water.
  • IF the sauce is too thin, make a slurry with cornstarch and a little cold water mix until smooth. Stir the mixture into the hot liquid until its blended.
  • You can use a Ranch Seasoning packet if you want, but I suggest making it from scratch. The store-bought stuff has too much sodium.

    What Is Crack Chicken

My Crack Chicken recipe is delicious and its named such because ranch seasoning, bacon, and cheddar are a winning combination that so many people love together. Ive come to learn that you either love or hate this cream cheese ranch chicken recipe. For every 10 people that love it, there is one that doesnt and thats okay. If youre suspect to the ingredients, try adding only 4 oz. cream cheese and reducing the ranch seasoning. Then, if youd like, add more cream cheese to the mixture once everything is tossed together. I like to add some hot sauce into the mix because it adds additional flavor without the distinct hot sauce taste.

My favorite way to serve up this cheesy shredded chicken is on a toasted bun or wrapped in lettuce. The Crack Chicken filling is perfect for a sandwich in much the same way Sloppy Joes are, too.

  • Pressurecook the chicken. Pat the chicken dry with a paper towel. Add the chicken, ranch seasoning mix and water to the instant pot. Stir to combine. Close the lid. Seal the valve and set the Instant Pot to Manual/High Pressure for 15 minutes. For fresh chicken, it will take about 10 minutes to come to pressure. Frozen chicken will take around 12 to 15 minutes to come up to pressure. When the time is up, let the Instant Pot release naturally for 5 minutes then quick release remaining pressure.
  • Shred the chicken. Transfer the chicken to a cutting board or bowl and shred with two forks.
  • Add remaining ingredients to the Instant Pot. Add the cream cheese to the instant pot, you can break it up a bit if you want, or cut it up in pieces. Transfer the chicken back to the instant pot as well and remaining ingredients, including the egg noodles.
  • Cook the noodles. Close the lid. Seal the valve and set the Instant Pot to Manual/High Pressure for 3 minutes. Once the Instant Pot cycle is complete, wait until the natural release cycle is complete, should take about 10 minutes. Follow the manufacturers guide for quick release, if in a rush. Carefully unlock and remove the lid from the instant pot.
  • Stir and serve. Give the noodles a stir and adjust with salt or pepper if necessary. Garnish with fresh parsley if preferred, and serve.

    Instant Pot® Ranch Chicken
    • Your Instant Pot won’t start cooking right away, it takes some time to build up the pressure!
    • Place all of the dairy products on top of the chicken when assembling, do not stir.
    • If you get the burn message, add ½ cup more broth or water and seal to continue cooking.
    • If you’re on a Keto diet, you can use a lettuce wrap in place of a bun!
    • Try mixing in some of your favorite hot sauce if you like a kick. It’s also great with Buffalo sauce mixed in!
    • It is easier to mix if you cut your cream cheese into cubes before putting it in the instant pot, but it isn’t necessary.
    • If you want to make a smaller portion, simply cut all the ingredient amounts in half and you should have about 4 servings.
    • Cheddar is my personal favorite, but if you don’t have cheddar cheese you can play around with different cheeses and I’m sure it will be delicious!
