This chicken and rice recipe is super easy, but be sure to add ingredients in order for the best results . Heres all it takes to get this 30 minute meal on the table:

  • In order, add mushrooms, onion, rice and chicken to the Instant Pot.
  • Top with chicken broth and finally put the mushroom soup on top.
  • Set the Instant Pot to high pressure for 10 minutes.
  • When the cooking cycle is done, let the Instant Pot depressurize naturally for 10 minutes. Release any remaining pressure.
  • Remove the chicken. Stir the rice and mushrooms.
  • Use two forks to shred the chicken. Stir back into the rice and serve.
  • Once cooked you may notice some liquid on top of the rice. Remove the chicken to shred and stir this into the rice. The Instant Pot is hot and it will continue to absorb while shredding the chicken.

    • I have used rotisserie chicken vs. raw chicken just use 2 breasts and dice the chicken up, then skip the first step where the chicken is browned, just put it into the bottom of the pot

    Use Condensed Soup If You Can Get It

    So for these photos, I used a different manufacturers can of cream of chicken soup for these pictures. .

    However, the soup I used here was not condensed so the sauce is slightly different and less thick than usual. So as I mention in the recipe, if you use a non-condensed can of soup, you may want to thicken the sauce before serving, using the optional cornflour mentioned in the recipe.

    So my recommendation is, if you can get your hands on some Campbells condensed cream of chicken soup, please do use that. It is just better, and will give you a thicker and tastier sauce in your casserole! Their soups really are the best!

    Chicken and rice casserole

    I have used chicken breast in this recipe, but if you wish you can also use chicken thighs and cook the chicken on the bone if you prefer. It is up to you.

    The secret to getting the nice fluffy rice in the photos is to rinse and soak your rice before you cook it. Check out some tips in my pilau rice recipe, just leave out all the added ingredients and add only a pinch of salt, but follow the same process of rinsing and soaking.

    Why I Love This Southern Instant Pot Chicken And Rice Casserole

    These days, I often make some of my favorite comfort food in the Instant Pot, because it saves time and keeps life simple.

    Ive made Instant Pot chicken pot pie, Instant Pot chicken with noodles, Instant Pot chicken and stuffing, and pressure cooker chicken and dumplings, so chicken and rice was a must-have, too!

    The best Instant Pot chicken and rice recipes are the ones that are easy to make yet bring about a sense of warmth and comfort when you eat them!

    Chicken and rice casserole has been one of my favorites over the years, and while there are many different variations, they all are based on the same premisewhite rice and tender chicken wrapped in a creamy sauce.

    Sometimes its topped with crushed crackers or cornflakes, sometimes its topped with shredded cheese that gets melted to perfection.

    This recipe for chicken and rice in the Instant Pot uses cream of chicken soup and shredded cheese to make that delicious sauce.

    A few months ago, I came across this crock pot chicken and rice recipe from Julie at Back to My Southern Roots. If you dont follow her already, you totally shouldshe has so many southern goodies on her site.

    I decided to convert the slow cooker recipe into a pressure cooker recipe, and made some adaptations to the recipe along the way.

    But let me tell you, the final result was delicious!

    How To Make One

    Note: Youll need a large skillet or large frying pan for this recipe. Keep in mind it will need to hold all of the broth and rice so it needs to be deep, not shallow.

  • Cube thawed chicken breasts into small, bite-sized pieces.
  • Heat skillet on stove over medium-high heat. Add 1 Tbsp. olive oil and once hot, add in chicken pieces. Brown on each side, adding more olive oil if needed and stirring occasionally. Chicken wont cook all of the way, this is just to brown the chicken and get some nice color on each piece. Remove chicken from skillet and set aside on a plate.
  • Add remaining 1 Tbsp. olive oil in pan and sauté onions, mushrooms and garlic over medium heat. Season with salt, pepper, thyme and garlic powder. Stir and cook for ~5 minutes or until onions become translucent and mushrooms are cooked down.
  • Add the soup & browned chicken pieces in, stir. Add in rice, stir.
  • Lastly add in the broth and gently stir. Bring this to a simmer, then turn heat down to low, cover with a lid and cook for 30-40 minutes, or until rice is cooked and tender.
  • Serve with broccoli or a side salad yum! Easy chicken and rice casserole for the win.

    • 3plump garlic cloves, minced

    Like creamy chicken soup? How about chicken rice soup? Well, this Instant Pot cream of chicken and wild rice soup changes things up a bit by using wild rice. You can substitute regular rice if you prefer, but it isnt the same. Using pure wild rice is the best for this recipe!

    I used rotisserie chicken for this, which is a great use for leftovers. But you can also make chicken soup in the instant pot using raw chicken breasts. I have the instructions for both ways in the recipe. I was a bit worried about the precooked chicken holding up for 35 minutes of pressure, but it came out fine.

    Ingredients are simple. The mushrooms add a nice extra flavor to the soup. I used baby bellas for this recipe.

    The soup is made creamy by adding milk or cream after cooking. Do not pressure cook the milk/cream as it does not hold up to pressure that well. Simply stir it in at the end, turn on the saute mode, and thicken it a bit with a slurry of cornstarch and milk or cream.

    The end result is a very tasty creamy chicken and wild rice soup with a nice mushroom flavor to boot!
