A Chef Reviews the Instant Pot (7-in-1 Pressure Cooker) | Sorted Food

Serious Eats / Vicky Wasik

The test: In reading reviews from Instant Pot users, a common user experience complaint is fear about the steam released when venting the pressure cooker. To find the least scary option, we added 3 cups of water to each pot, sealed the lid, and selected the pressure cook option for 5 minutes. Once the cooking ended, we released the pressure and waited for the float valve to drop before opening the lid.

Another common frustration is about how the inner pot spins uncontrollably while sautéing. We took note of this behavior while searing the meat and sautéing the onions for the chili test mentioned above.

Intuitive design is also a heavy hitter in affecting user experience. The control panels on each model vary some use buttons while others have dials for navigating options. Each model gives information about whats happening inside the pot through different status indicators.

Ease of cleaning, of course, is also important.

All of the pots spun while we was searing and sautéing except for one: the Duo Pro. We tested this pot both on the stovetop and in the machine and it was stable in both methods. It had handles that held it put in the cooker’s base.

The Duo Pro was the easiest to navigate, and the steam release felt safe and simple. The upgraded inner pot that doesnt spin when stirring and can be used on the stovetop is a true value-add.

What Are Instant Pot Trivets Used For

You can use trivets for Instant Pots to make different delicacies. Some of these delicacies are explained below

Cooking meat

A trivet helps you cook meat in an Instant Pot without losing the flavor. The rationale behind cooking meat with trivet is that when you cook meat directly inside water, the meats flavor leeches into the water. Except youre consuming the water with the meat, the leeched flavor ends up wasted. A good thing about cooking meat with a trivet is that you can pour seasoned liquid or broth inside the Instant Pot for the meat to absorb the flavor while steaming.

Making cakes and cheesecakes

Surely nobody wants to eat a cheesecake with a soggy crust. Although the springform pan is the main accessory needed when using an instant pot to make a cake, you still need a trivet to lift it right above the water. You can follow this same method for making lasagna and casseroles by placing the casserole pan on the trivet.

Cooking eggs

Unless you want to end up with overcooked eggs with cracked shells, you shouldnt boil your eggs inside an Instant Pot. Instead, place them on a trivet and let the steam handle the rest. You wont only end up with perfectly cooked eggs the shells will also peel off easily. A common worry about boiling eggs with trivets is that they may fall off. To ensure they dont fall off, you may add some veggies to the mix or place them carefully. Alternatively, you can opt for an egg stack trivet. They work best for holding eggs in an Instant Pot.

The Classic Duo Model

If you are looking for a model that has all the great functions of an Instant Pot without any extra bells and whistles, opt for the best-selling Duo. It comes in the 3-, 6- and 8-quart sizes and has 13 one-touch programs including soup/broth, meat/stew, bean/chili, slow cook, sauté, rice, porridge, steam, yogurt, keep warm and pressure cook.

If the yogurt button doesnt appeal to you, the Lux is the most basic Instant Pot model, offering all the functionality of a pressure cooker, slow cooker, rice cooker, sauté pan, steamer and warmer without the yogurt-making feature. We do not recommend making yogurt in the Lux model.

How We Test Instant Pots

Best Instant Pots in 2021

To see how Instant Pots and multi-cookers stack up, weâve spent hundreds of hours whipping up curries and chilies, preparing batches of rice, and even steaming portions of vegetables, comparing the end results. Weâre looking for meat that falls off the bone but is still tender and succulent, rice thatâs fluffy but still with some bite, and crisp vegetables. Weâve also compared how easy they are to use and just how much they speed up cooking.

We evaluate each model on how many different cooking methods it offers, how durable and easy to clean the body and parts are, how loud it is in use and when releasing pressure, and how hot the exterior casing gets. Weâre also assessing how simple each multi-cooker is to use and whether you need to read the instruction manual before cooking, whether recipe inspiration is provided and the useful accessories such as racks and trays it comes with.

How Does Pressure Cooking Work

A traditional pressure cooker works somewhat like a covered pot when you increase the temperature of the liquid to cook the food inside. However, a pressure cooker has a heavier lid equipped with a rubber gasket that clamps onto the top of the pot.

Once heat is applied, the trapped steam builds pressure to approximately 15 pounds per square inch , thus increasing the temperature of the liquid in the pot above the boiling temperature of water 212 to 250 . The higher temperature cooks the food faster.

The increased pressure also infuses moisture and liquid into the food, which softens the fibrous or connective tissue and tenderizes it.

Once cooking time is completed, and before the lid can be opened, pressure must be released in one of two methods. For softer foods, like vegetables and eggs, the pressure valve on top of the lid is unlocked, which releases the built-up steam inside the cooker in a geyser-like rush. For meats and beans, the pressure valve is kept locked, which allows the pressure to decrease naturally on its own in about 20 minutes.

How Easy Is The Instant Pot Multi

This multi-cooker arrived securely packaged. It is a relatively compact model that was quick and easy to remove from the box and set up on the countertop.

The Instant Pot comes ready assembled, so once all the packaging had been removed and the main bowl cleaned, it was a doddle to get started. One feature we particularly loved was the two silicone-covered handles on the main pot. These made lifting the pot out a breeze and the silicone kept the handles cool, too, even after a couple of hours of slow cooking.

All 10 buttons on the front of the Instant Pot were responsive and well labelled. The display takes getting used to as it is a little busy, but, overall, it is clear and relatively easy to read. When slow cooking, we spotted that the progress indicator remained on the ‘preheat’ for the majority of the time. It was only towards the end of the cooking time that the indicator quickly jumped to display ‘cooking’. We searched the internet for help and found that this was a common issue. Unfortunately, the manual didnt offer any troubleshooting information regarding this.

Although the manual is clear and useful regarding assembly plus the various cooking times and temperatures of a variety of ingredients, it is very pressure cooking focused. There is little descriptive or useful information on the other settings, which was a shame as we struggled with some of the other pre-sets.

Other Electric Pressure Cookers We Tested

$199 at

If you love the Instant Pot Duo and also love using an air fryer, this may be just the electric pressure cooker option for you. We found it performed identically to the Duo when it came to pressure-cooking our three recipes, and the interface is also essentially the same as the Duo, though it has four more cooking functions than that model .

However, its about twice as heavy as the Duo, and with the air fryer lid , it requires a lot of vertical storage and counter space . Included are a broil/dehydrating tray, multi-level air fryer basket, air fryer basket base, protective pad, storage cover and rack. So, if you think an air fryer-pressure cooker combo would save room and youd use it frequently, this model is certainly worth considering. Otherwise, the Duo will work just fine and the Pro Plus will perform even better.

You’ll Need Some Cookbooks

Multicooker cookbooks in North America can have a weird sameness to them: chicken soup, chili, mac and cheese, repeat. Ugh! Dig around a bit and you can find more diverse and just more interesting stuff out there.

Indian food is huge in this realmcheck out some of their and remember that if you already own a favorite slow-cooker cookbook and have a bit of ingenuity, you’ll be able to adapt most, if not all, of the recipes in it to work in your pressure cooker.

The top picks from my full list of recommended cookbooks are Multicooker Perfection from America’s Test Kitchen for the classics, Melissa Clark’s Dinner in an Instant for more exciting recipes, and Urvashi Pitre’s Indian Instant Pot for fast and very tasty food from the subcontinent.
