- Beef broth beef broth is essential in the flavor of your Instant Pot beef stroganoff. Make sure to get normal beef broth and not low sodium
- Crimini mushrooms when thinking about classic stroganoff flavors, umami is definitely important. We used crimini mushrooms.
- Salt dont skip the salt. Not only does it tenderize the beef, but also enhances the flavors of the sauce.
- Onion onion is super important for flavoring the sauce. Yellow and white both work.
- Garlic go big or go home. I dare you to double the garlic
- Red wine red wine is another flavor element that just adds warmth to stroganoff sauce. Dont have wine? Replace it with broth instead.
- Worcestershire sauce the vinegar and savory flavors of Worcestershire sauce is a must!
- Extra-wide egg noodles we tried this recipe with medium and wide noodles, and extra-wide is the way to go!
- 2% Greek yogurt most beef stroganoff recipes call for sour cream. We, however, are using 2% Greek yogurt instead. Its a similar flavor profile, but a bit better for you. If you want a more classic sauce, feel free to swap for sour cream.

How To Make Beef Stroganoff In Instant Pot
STEP 1: Cut beef into 1-inch cubes or strips. Season generously with salt and pepper. Select SAUTE to start heating the instant pot. Add butter and brown the meat in a single layer in the bottom. Once browned, remove to a plate and continue browning all the meat. This may take a few minutes.
STEP 2: Once all the meat is browned, add more butter to the pot. Add onion and mushrooms and cook for about 3 minutes, until the onions are soft.
STEP 3: Add garlic, tomato paste, and beef broth to the Instant Pot. Stir until bits on the bottom of pot come loose. Turn off. Add meat back to the pressure cooker.
STEP 4: Secure lid and make sure the valve on top is set to SEALING. Select high pressure and set for 18 minutes.
STEP 5: While the beef stroganoff cooks, prepare egg noodles according to package directions. Drain and set aside.
STEP 6: When the cook time ends, let pressure release naturally for ten minutes, then do a quick release until the valve drops. Open the lid.
STEP 7: In a small bowl, whisk the cornstarch with cold water until smooth. Add this slurry to the instant pot and select SAUTE. Continue cooking until the sauce begins to thicken and boil .
STEP 8: Remove a small spoonful of the sauce and place it in a bowl with the sour cream. Whisk together then pour into instant pot. Stir until smooth. Add cooked noodles and serve with parsley.

Can I Cook The Egg Noodles In The Instant Pot
When I was researching how to make Beef Stroganoff in the Instant Pot, I came across a lot of recipes that suggested cooking the egg noodles in the Instant Pot with the sauce. I have cooked noodles in the Instant Pot before and I have found that they come out a little on the soft side. My family prefers noodles more al dente, so I like to cook them separately. If you want to cook the noodles with the sauce, follow steps 1-8 below and then add the egg noodles to the pot. Set the Instant Pot to Manual and cook on high for 5 minutes. Do a natural release for 5 minutes, and then a quick release. You shouldnt have to follow the optional thickening instructions, since the pasta will release some starch into the sauce while cooking.
