For me it comes down to time but I have to say even though I love taking my time on recipes, 48 hours of cooking and leaving the stove on overnight, is not for me. My family loves beef but we dont need our house to smell for days of it either, nor do we want to take a chance and burn the house down.

So heres my best recipe for Instant Pot beef bone broth that I will be using from now on. If I have some time, then I will blanch, roast, then pressure cook. If I dont have as much time, then I will just roast and pressure cook. I do feel roasting makes a huge difference, enough to justify the time so I suggest you dont leave out that step.

I really dont like to make health claims and so I will hedge a bit here. There is clearly some protein in bone broth, and there are other nutrients too. If you use marrow bones, as Ill be calling for below, then you get the nutrients which are claimed to be found in bone marrow which are:

However, its not clear how much of these nutrients end up in the broth. Some people add vinegar when making bone broth and claim that this helps the nutrients dissolve into the broth. I have no way to assess this claim. I do add vinegar to my bone broth though. I figure it cant hurt and it does add the slightest bit of flavor so why not?

Many people also claim that collagen from bones is good for our joints and skin. Ive been doing some reading about collagen supplements and about collagen in bone broth and Im not sure that the evidence is super-strong right now. But, it doesnt seem that collagen in homemade stock can hurt you. So if you want to get a bit of collagen in case it helps, then making your own stock seems like a good idea.

I guess my answer to the second reason for making bone broth is to not expect any miracles but if you like the taste and enjoy making it, then go for it. Its a wonderful drink to sip on and its delicious in soups and sauces and for making side dishes .

However, you can get by with just a stock pot and a strainer, if necessary. Here are the things youll need to make this recipe:

  • Instant Pot While you dont have to pressure cook the bones to make bone broth, this recipe uses an Instant Pot for ease and convenience. It takes a long time to make proper bone broth. If you make it on the stove top, youll have to watch the pot simmer for many, many hours. The Instant Pot takes WAY less time to make the same product and you dont have to stay home and watch it so it doesnt burn your house down.
  • Stock pot You will need to blanch the bones before roasting them, to remove the gunk and blood from the bones. I use a 6 qt stockpot for this. If youre making a batch of bone broth that fits into the Instant Pot, then this is a large enough size.
  • Baking sheet After blanching the bones, you need to roast them, for additional flavor. With the small amount of bones needed for this recipe, a small baking sheet is large enough for the bones. You can also use a small roasting pan.
  • Fine mesh strainer Once the cooking is complete, you need to strain all the extra bits from the stock, so you have a nice clean, smooth stock, without bits and pieces.
  • Voil Youve Just Made Broth

    Remove the insert and allow the broth to cool enough so that you can taste it without burning your tongue. Add sea salt to taste or leave it unsalted for use in recipes and as a cooking liquid for potatoes, vegetables, or rice.
