Because of their high starch content, russet potatoes are good at absorbing oils and water to cook, so they come out light and fluffy inside, and their thick skin gets nice and crispy under high heat!

All purpose potatoes usually have medium starch and are good for anything: boiling, roasting or mashing.

Like potatoes! A pressure cooker makes fast work of steaming a bunch of cubed potatoes, and I use them for all sorts of things all week long.

You might be thinking that its overkill to bring out the pressure cooker for a simple kitchen task like steaming vegetables, but it’s the way that works for me.

I like being able to load up the cooker, press a button, and walk away, rather than waiting around tending a pot on the stove. My Instant Pot also beeps ten times in a row when its done, and I can hear it from just about anywhere in my little apartment so I know when my food is ready.

The classic combo of protein-rich tuna with creamy mayo and corn is a much-loved stuffing in baked potatoes. Add a bit of melted cheese to the mix and you have a hearty meal that is also very nutritious. Dont forget the scallions!

WHAT YOU NEED: canned tuna , sweet corn , mayonnaise and grated cheese and scallions or chives for garnish.

Step 2. Combine tuna, corn, mayo and a little pepper in a bowl and mix. Top each potato half with the creamy tuna and scallions on top.

How To Get Crispy Skin:

Crispy skins on your potatoes are a vital part of a good baked potato. The crispy skins break open to reveal a creamy and fluffy inside that absorbs butter, sour cream and herbs very well.

To get crispy skins on your baked potatoes, there are two very simple things to keep in mind.

Number one is to make sure the potatoes do not touch the water in the Instant Pot. The potatoes have to be placed on a trivet or steamer to stay far above the water level. If the potatoes cook while touching the water they absorb too much water and become mushy. Definitely not baked potato style.

Thats the first step and its all in preparation for the most important step of all. Broiling! After cooking your potatoes in the Instant Pot, set your oven to broil and allow to heat up to about 500°F. Spread the baked potatoes evenly on a baking sheet.

Then add some olive oil and sprinkle over some sea salt. Broil the potatoes for a few minutes until the skins are slightly browned and crispy.

What Others Are Saying

Donna Cerny says:

These were perfect! Perfectly cooked on the inside and I did the oven crisping technique for the skin as well.

Antonia George says:

I had smaller potatoes and cooked them for 10 minutes and they came out perfect. I don’t eat the skin so I skipped throwing them in the oven, but my husband made his that way. So much easier than baking in the oven the entire duration.

Nathalie D says:

I love crispy skin so I really appreciate the tip about adding the potatoes to the oven at the end. This method is much quicker and easier than baking in the oven. All four potatoes were cooked perfectly on the inside. Nothing worse than an undercooked potato! Glad I found something that works.

How To Season Instant Pot Chicken Thighs

Whole sweet potatoes cooked in the Instant Pot

Since my goal is to always make the recipe easy without sacrificing the flavors, I am sharing my go-to easy poultry seasoning. I season the chicken thighs on the skin side first. All you need is: salt, black pepper, paprika and dried oregano. Thats it! Sprinkle and you are done. The skin side is the first one to be browned in the pot so place the thighs skin side down in a heated pot with oil and butter. Let it brown for 2 to 3 minutes. The addition of butter will give you the crispy, golden brown skin. The more browned the chicken is, the more flavor it and the gravy will have but watch it so it wont burn.

Next, flip it on the other side and let it cook for just a minute. Press cancel/off button. Remove the chicken onto a plate and add water to the IP. Scrape all the brown bits from the bottom of the IP insert. Place the trivet in the insert and arrange chicken thighs on the trivet. Now all you need to do is set the IP to cook for 12 minutes. Always check the internal temperature of the cooked meat. For chicken its at least 165 degrees F. I checked my chicken thighs and they all were around 200 degrees F.

Should You Peel Potatoes Before Or After Boiling

I actually peeled the potatoes before boiling them in the instant pot, only because I preferred it that way when I made these.

You can peel the potatoes before boiling the potatoes, or you can peel them after you boil them, as you like.

You may also keep the skin of the potatoes if you wish to leave it on for you to enjoy.

It is really not necessary to peel the potatoes, since we use them in many recipes with skins on.

However, to use in recipes like mashed potatoes where you do not want the peels of the potatoes, you can remove them .

Whether you want to peel the potatoes before or after boiling the potatoes, is really based on what is convenient to you.

If you decide to peel the potatoes before cooking, you can use a good quality potato peeler to remove the skin.

If theres a lot of dirt in the skin of the potato, it is actually a good idea to remove the peel before you boil them.

However, if you clean the skin of the potato, you can boil the potato with the skin itself.

Once boiled, allow the potatoes to completely cool down, then you can easily remove the skin with your hands if you dont have a potato peeler.

    Easy Instant Pot Mashed Potatoes

If you wonder how long should you boil potatoes in the instant pot so that they will be soft enough to make yummy mashed potatoes, here is the answer for your question.

In this recipe for boiled or steamed potatoes in the instant pot without trivet, we cook the whole potatoes for about 30 minutes in high pressure to make soft & creamy potatoes.

These perfectly cooked creamy yellow potatoes are perfect for making easy and delicious mashed potatoes.

Notice that the 30 minutes cooking time is for whole potatoes & not diced ones.

So basically, the process is so much more easier with the instant pot, because without even peeling or cutting the potatoes, you need just thirty minutes time to boil the whole potatoes.

The potatoes that we use here are yellow potatoes or yukon gold potatoes, which are perfect for making mashed potatoes.

Keep in mind that the instant pot takes a few minutes to come to pressure and another few minutes to release the pressure, which is not included in this boiling time for potatoes.

If you want to boil potatoes for a potato salad, you can use the same method of cooking but you might want to reduce the cooking time because the cooking time used in this recipe is 30 minutes, which is for making very soft cooked potatoes.

You get tender potatoes by cooking this way and you can easily pierce the potatoes using a fork.

If you want to make creamy mashed potatoes that are super soft in texture, I recommend boiling the potatoes for an adiitional 5 minutes.

How To Make Instant Pot Baked Potatoes

These Instant Pot potatoes are so simple to make. Youll start by scrubbing your potatoes. Then, prick the potatoes a few times with a fork. Pricking the potatoes will allow steam and pressure to escape from the potatoes as they cook.

Place 1 cup of cold water in your Instant Pot. Cold water is recommended because the water temperature will affect how long it takes your Instant Pot to reach pressure, and therefore how long your potatoes will cook.

Next, place the metal trivet in your Instant Pot. You want to cook the potatoes on top of the trivet so that they dont sit in the water and get soggy.

Place the potatoes on top of the trivet. It is okay if your potatoes are stacked on top of each other in the pot. Close the Instant Pot lid and turn the steam release valve to the sealing position.

    Quick And Easy Baked Potatoes

Baked potatoes in the Instant Pot are the quickest and fluffiest baked potatoes you will ever make!

Why the Instant Pot? It only takes 37 minutes to cook a whole pot of medium russet potatoes in the Instant Pot. And that includes time for the IP to come up to pressure AND release pressure. WOOOOO-HOOO! That is so much less than the time it takes to cook a baked potato in the oven.

The Instant Pot also allows for a “set it and forget it” mindset. No checking on them and wondering if they’re done or flipping them halfway through. Just a push of a button and you will end up with the fluffiest baked potatoes ever.

What is the texture like? SO SUPER FLUFFY! The potatoes actually steam rather than bake in the Instant Pot, which makes them moist and fluffy every single time.

    Reheating And Storing Mashed Potatoes

You can make a big pot of mashed potatoes ahead of time and store them in an airtight container, but expect them to have a slightly different flavor and be less fluffy when reheated.

If leftover mashed potatoes are too dry, try adding a splash of milk and a pat of butter to moisten them. Mine never last long enough to go beyond one day, says Lo, but leftover or made-ahead mashed potatoes should last around two to three days in the fridge.
