How to Cook a Steak in the Instant Pot

Speed is key in weeknight meals. Thats why the combination of the Quicker Picker Upper and a pressure cooker works so well. A pressure cooker is a great way to easily cook the steak bites until theyre nice and tender. But for maximum flavor, you should still sear the steak first to caramelize the outside and create all those flavorful browned bits at the bottom of the pot. To make sure the steak sears and doesnt steam, remove as much moisture off the surface as you can before it hits the pan. Thats where Bounty paper towels come in handy. Patting the steak cubes dry first with a super absorbent paper towel like Bounty means theyll sear quicker and better once they go into the pressure cooker so youll end up with browned pieces of beef, not steamed gray ones.

What Are The Ingredients

To make this tender, flavorful cube steak, you need the following ingredients:

  • cube steak- cube steak is a cut of meat that has been run through a mechanical tenderizer machine. The name comes from the cube-shaped indentations made by the tenderizer.
  • flour
  • beef broth-you can use low sodium broth
  • onion
  • Lipton Onion Soup Mix
  • Cream of Celery Soup- you can also use Cream of Mushroom Soup or Cream of Chicken Soup

While the recipe calls for chuck roast, you can substitute flank steak or London broil. Readers have also used skirt steak with this recipe, though its a little chewier cut of meat.

Also, if you want to substitute chicken for the beef, go for it! Just change out chicken broth for the beef broth. Dice the chicken into bite-size pieces and reduce the cook time to 3 minutes at high pressure.

What If My Pot Roast Is Tough

If after cooking the pot roast, it is still tough, all you need to do is cook it longer. If the beef is still tough, it just needs more time for the braise to do its magic and break down the connective tissues in the beef.

Since we are using a pressure cooker, if after our suggested cook time, the beef is not as tender as youd like, you will need to place the lid back onto the pot, seal it, and then cook at high pressure for additional time .

How To Choose The Best Pork Meat

Nothing can be more important when cooking a good steak is the right choice of meat. The first thing that you should pay attention to is its freshness. Fresh meat has pale pink flesh and should be firm. Never grab meat that looks greasy or grey.

It also should not stick to your fingers to touch. When lightly pressed with fingers, the meat should spring back. And of course, smell always smell meat if you have the possibility. Your sense will never lie to you.

Steak is a slice of meat cut from the fleshy part of an animals carcass. The perfect cut for meat is fine-grained in texture. The fibers should be dense and breaded with fat. Qualitative and fresh fat should be white or pink-white and soft.

To keep the freshness of meat, store it at 32 °F to 42 °F temperature. I always prefer to buy meat at farmers markets or our local butcher for steaks and grill.

For steaks, I do not recommend frozen meat, as it loses its succulent texture. Anyway, if you grab a frozen piece of meat, then it should be thawed gradually. Never defrost it in a microwave. Transfer it from the freezer to the refrigerator and leave it until thoroughly thawed. Once the meat has wholly defrosted, cook it immediately.

    Making A Pressure Cooker Steak

The most common way to cook a ribeye steak is to grill or saute it to medium-rare, preserving the tender juiciness that the marbling of the steak provides. Pressure-cooking is best-suited for a large, tougher piece of beef thats not naturally as tender.

The high pressure that the steam creates into the pressure cooker breaks down the tough fibers of these cuts, allowing them to taste like theyve been slow-cooked, simmered or braised for hours. Ideal cuts of meat for pressure-cooking include chuck roast, beef ribs and oxtail.

Heres how the pressure cooker works: The liquid within a sealed, airtight pot builds up pressure, which raises the boiling pot of the water.

The higher temperature of the liquid not only cooks the food faster but also forces moisture into the food, which allows it to become tender much more quickly than with other cooking methods.

According to Utah State University Extension, pressure cooking also retains more nutrients than other methods of cooking, as food cooks more quickly and very little liquid is required.
