I have never bought canned chickpeas. In fact, never knew until I traveled outside India or my home. A few times, I thought of buying the canned chickpeas, but never did I. every time the thought came to my mind, I was like why? The first reason, is I am not sure what all the tin may have to keep those chickpeas fresh for days.

Second, they are way costly. If you buy dry chickpeas and use them you would get much better value. 1 Cup of dry chickpeas when soaked swell up to approximately 3 cups.

Third, when it is so easy to make it at home. All that is required is a bit of planning. Soaking, and while cooking just some salt and water.

Two Reasons To Love Cooking Beans In The Pressure Cooker

First, you don’t need to watch the stove. No more waiting for water to come to a boil, no more foamy spill all over the stove, and no more filling the pot often to avoid the chickpeas to burn.

Second, the cooking time you expend cooking dried beans is less because the instant pot cook the beans in half of the time it takes you to cook them on the stovetop. If you choose the soak method, it only takes 15 minutes of pressure cooking and with the no soaked only 50 minutes of pressure cooking.

First, soak the chickpeas in water overnight . This helps them soften and cook more fully. We also like adding a teaspoon of baking soda to soften them even more.

We tested unsoaked versions and found that soaked were much better. Unfortunately, the unsoaked chickpeas just would not soften in the center.

Once the chickpeas have soaked, they will plump up and expand in size .

Next, youll rinse the soaked chickpeas and add them to the Instant Pot. Then cover with just enough water to submerge them, but not so much that youll end up with a lot of excess liquid after cooking.

Then add seasonings of choice, if desired, and close the lid. Pressure cook on high for 15 minutes, or up to 17-18 minutes for super buttery, tender chickpeas. Note: If you soaked your chickpeas for longer than 8 hours , you may even be able to get away with cooking for 12-14 minutes!

Then quick release and drain off the excess cooking liquid. Or, to concentrate the flavors, you can press Cancel and then Sauté for ~5 minutes to evaporate excess liquid.

Do You Have To Soak Instant Pot Chickpeas

Good question. Short answer? It makes the most reliable chickpeas in a pressure cooker. Weve experimented with soaking and not soaking. Heres what to know :

    • Soaking makes the most tender, evenly cooked chickpeas. We know, it requires thinking ahead. But its totally worth it! All you have to do is soak overnight in the bowl of your pressure cooker. Cover the chickpeas with 2 inches water and soak for 10 to 12 hours.
    • What if you dont have time to soak? You can also cook unsoaked chickpeas! Youll simply pressure cook them for 35 minutes instead of 23 minutes. Keep in mind: unsoaked will be drier. If youre using them for something like hummus, youll have to add more liquid. See the recipe below!

Step 3. Drain the chickpeas, add the soak chickpeas and the water to your instant pot’s inner pot.

Step 4. Place the lid on the pot and lock it in place. Press the manual/pressure cook button and choose 15 minutes on high pressure.

Faq: How Do You Peel Chickpeas

    Instant Pot Chickpeas (No Soaking)

Since posting this recipe, many of you have asked us about the best way to peel chickpeas. Here are two methods:

  • Add the cooked chickpeas to a clean dishtowel, cover, and then roll the beans around until the skins fall away from the beans. Carefully pour the beans into a bowl of clean water, stir and wait as the skins float to the top. Skim away the skins and you are done. This might not get rid of all the skins, but it does a good job for most of them.
  • Add cooked chickpeas and baking soda to a skillet. Toss them around a bit, and then heat them over medium heat for a few minutes. Transfer the beans to a large bowl with cold water. Agitate the beans between your hands so that the skins begin to release. Wait as the skins float to the top. Skim away the skins and you are done. You will need to change the water a couple of times. Use 1 ½ teaspoons baking soda for 2 cups cooked beans.

    What Is An Instant Pot

The first time I heard the words, Instant Pot, a confused look crossed my face. What is the magical kitchen device people keep talking about? Isnt an Instant Pot simply a slow cooker on steroids? Turns out that I really wasnt too far off base with my question.

Simply put, Instant Pot is the brand that created a multi-function electric pressure cooker. Their device combines the functionality of a pressure cooker, slow cooker, and crock-pot into one kitchen appliance. It has the capability to saute, steam, and cook food all in one. Best of all, an Instant Pot helps quicken the cooking process.

Instant Pots range in size from 3 quarts up to 8 quarts. Models come equipped with 6 in 1 and up to 10 in 1 functionality. These larger models include the ability to make yogurt, rice, and cook eggs. They are truly remarkable machines worth the investment.

We have the Instant Pot Duo Plus 9-in-1. It has a six-quart capacity, which is more than enough to cook for two people or for a small group. There is also an 8-quart option for families. This recipe will make about 10 servings, which is great for entertaining or for batch cooking.

    How To Make Aquafaba

In recent years, aquafaba or the liquid the chickpeas cook in has become popular. Since it is starchy, it works wonders as an egg replacer. Those who dont eat eggs have fallen head over heels for aquafaba! We use it in baking and to make vegan mayonnaise. We have shared a deep dive into this magical ingredient, but for now, Ill briefly share how you can make aquafaba when cooking your own batch of chickpeas from scratch.

  • Soak the chickpeas as suggested above use either the long or quick method.
  • Drain the soaked chickpeas, and then cook according to the stovetop directions in this article, but be more accurate when measuring the beans and cooking water. For 1 pound of chickpeas, you will need 8 cups of water. Do not use any salt or spices.
  • Once the chickpeas are cooked, turn off the heat and cover with a lid. Allow the beans to cool down in the cooking liquid. This step leaves extra starch in the liquid, which is what gives aquafaba its egg-like magical properties.
  • When cool, remove the chickpeas with a slotted spoon, and then bring the cooking liquid to a simmer and cook for another 30 to 45 minutes. In this time, the liquid should reduce and turn into a thicker, yellowish liquid resembling the liquid that comes out of canned chickpeas.
  • Allow the aquafaba to cool, and then store in the fridge for up to 5 days or freeze for months.

What Are The Benefits Of Chickpeas

The little legumes known as chickpeas or garbanzo beans are loaded with fiber, protein, and lots of essential minerals. They can regulate your blood sugar, aid in digestion, and keep you full for a long time. Win-win-win!

The high protein content makes chickpeas particularly good for those on a plant-based diet. Plus they are incredibly versatile. Think salads, soups, and even my favorite Roasted Chickpea Snacks!

Another benefit of Instant Pot Chickpeas no soak version is that they are very economical and quit to make. You can make a full pound of these delightful protein morsels for less than a couple of bucks. Thats pretty impressive!

    Making Instant Pot Chickpeas:

    Instant Pot Chickpea Curry

First of all, when buying chickpeas, shop at a market with a high turnover if possible, for the freshest beans. Theyre going to cook up much faster old beans can take forever to become tender. If you suspect your beans are older, try adding in 1/2 teaspoon of baking soda when you cook them. Rinse and sort through the chickpeas for any debris or small rocks before cooking.

Ive done a lot of experimenting with chickpeas and found that, even though people say when cooking Instant Pot Chickpeas that you dont have to soak them or say that you can do a quick soak, either in the Instant Pot or by bringing to a boil and letting them sit for an hour, both methods will give you inferior chickpeas. They will take longer to become tender and it is very likely youll have a mix of tender and either too well-done chickpeas or tender and crunchy chickpeas.

The ones that are too well done will be falling apart, ok for hummus but not necessarily the best for other recipes and the ones that still have some crunchy chickpeas will need to be cooked longer, which means the pot has to come back up to pressure, you have to guess at how much time to set them for, then the pressure needs to be released again, which will take time, and when they are all done, some will be too well done and falling apart.
