Do You Need To Soak The Dried Beans For The Ham And Bean Soup

Theres always a lot of discussion and debate if you need to soak the beans. We tried both methods and for the most part, they tasted the same. We always used dried white beans or dried cannellini beans. They cook great and perfectly tender. Other types of beans might cook differently, so youll have to be open ended to different cooking times and textures when not soaking other beans. Soaking takes an extra step and we found that we didnt need to do that. It was easier to just add the dried beans in the pressure cooker and then cook it for a little longer. If youre used pre-soaked beans, you can cook it for about 20 minutes less.

Start By Sauting The Vegetables

I used carrot and celeriac, red bell pepper, yellow onion, sun-dried tomatoes, and garlic. You can also use celery instead of celeriac. Use the Sauté function of your Instant Pot and cook the onion first, using avocado oil or simply by adding a bit of water. Add the garlic and cook for a few seconds to release its flavor, then add the rest of the vegetables and cook for three minutes more, stirring frequently.

  • Cumin adds a touch of warmth without being overwhelming. It adds that little somethin somethin.
  • Cayenne pepper adds a very slight kick. Its not super spicy but you can leave it out if youre feeding kiddos or sensitive folks. You can also add more if youd like a more prominent spicy flavor.
  • If youre thinking about adding salt, only do it at the end of the cooking time and definitely taste it first. There is salt in the seasoning ham and broth. I dont add any additional salt and it is perfection.

  • Divide the soup into containers and let it cool down. Store airtight in the fridge for up to 5 days and reheat until very hot.
  • Follow the above instructions for the freezer. Label the containers and store them once cooled down completely. Freeze for up to 3 months. Defrost in the fridge overnight, in a microwave or directly in the pot over low-medium heat.

How Do You Store Leftover Instant Pot Bean Soup

This recipe makes a lot of soup and dont worry if you have a smaller family it freezes great. I make a batch then freeze in single and double portions. That way I have a future dinner or two waiting.

Cooking white beans for 35 minutes should be enough time for the beans to become very soft and tender. However, beans can be unpredictable. Sometimes, most of the beans will be perfectly cooked and others will be floating around all hard and wrinkled. This can happen due to old beans, or if acidic ingredients are added like vinegar, lemon or tomatoes. The good news is that you can simply re-seal the pressure cooker and re-program it to cook for 5 more minutes . If the beans still aren’t completely cooked after that, just program the beans to cook for a few minutes more.

This hearty, comforting soup is a meal in a bowl. The dish has roots in the U.S. Senates tradition of serving soup during legislative sessions when it was often made with beans as a protein source and vegetables from the garden.

I first learned about this soup this past summer when my son was working in the Senate. He had the opportunity to dine in the Senate dining room with the Senator he was working for. He ordered this soup, fell in love with it, and then made sure to tell me all about it later that day.

  • Vegetables: carrot, onion, garlic, tomato
  • Ham: Either leftover ham shanks or cubed ham. You can also add ham hocks.
  • Beans: 3 cans of Great Northern, Navy beans, or Cannellini beans, or 1 lb Great Northern beans, soaked for 1 hour using the quick soak method
  • Vegetable stock: You can use vegetable or low sodium chicken broth/stock
  • Water: I use about 1 to 2 cups of water depending on the consistency you like. Keep in mind that the soup thickens as it cools.
  • Seasonings and spices: salt, freshly ground black pepper, dried mint, thyme, paprika, bay leaves, fresh parsley

How To Make Instant Pot 15 Bean Soup

  • Set your Instant Pot on the Sauté setting and add the oil. Once heated, add the onion, carrot, and celery. Cook, stirring, for 4 to 5 minutes, or until onion and veggies begin to soften. Add the garlic and cook for an additional minute then press Cancel.
  • Transfer the rinsed dried beans to the Instant Pot.
  • Pour in the tomato sauce, broth and water.
  • Add the chili powder, cumin, oregano, cayenne, and the bay leaves. Stir well to combine.
  • Tuck the seasoning ham down into the mixture. Lock the lid in place and make sure vent is sealed . Pressure cook on High for 40 minutes.
  • When time is up, allow the steam pressure to naturally release for 15 minutes then manually release any remaining pressure. Unlock and remove the lid. You can remove any good chunks of ham from your seasoning ham to chop up and add back to the soup. Discard the remainder of the seasoning ham and bay leaves.

If a creamier texture is desired, pulse the mixture with an immersion blender 3 or 4 times. Just enough to break up some of the beans. Dont go overboard, you want lots of whole beans and a few pulses will yield a nice and creamy result.

  • To Store. Cooled soup can be stored in the fridge for up to 3 days. Keep it in an airtight container.
  • To Freeze. Freeze the soup as soon as its cooled down. It can be frozen in a large batch or as individual portions for up to 3 months. Defrost the soup overnight in the fridge and use it within 24 hours. You can also defrost in a microwave or on a stovetop on low heat.
  • To Reheat. To reheat the soup, add a splash of water or stock if the soup has thickened. Make sure to reheat until piping hot. Note that the pasta will be softer after reheating . If making it for freezing specifically, you can change the time from 4 minutes to 3 minutes so its a little more al dente.

  • Ham If you dont have a leftover ham bone, a ham hock from the grocery store or your local butcher will work perfectly. Look for one with a bit of meat on it, so you can add it to the soup once its cooked.
  • Stock or BrothChicken stock or turkey stock adds great flavor. If you prefer more liquid in your soup, add a couple of extra cups of broth to the Instant Pot.
  • Cooking BeansWhen cooking with beans, always add acidic ingredients such as tomatoes or lemon juice after the beans are cooked through. The acid binds to the outside of the bean and makes it harder for water to permeate them to cook them.
  • To thicken bean soup let it simmer uncovered on saute or give it a couple of quick pulses with an immersion blender.

How To Make Instant Pot Navy Bean Soup

Place one pound of navy beans in a colander, rinse them well with cold water and allow to drain. Pick through the beans and remove and discard any debris.

  • Add oil to the Instant Pot and press the SAUTE button. When display reads Hot add the onion, carrot, and celery. Cook, stirring, for 4 to 5 minutes, or until onion and veggies begin to soften. Add garlic and cook for an additional minute then press CANCEL.
  • Add the beans, low-sodium chicken or vegetable broth, water, thyme, cumin, cayenne, and the bay leaves. Stir well to combine.
  • Tuck your seasoning ham of choice down into the mixture. Lock the lid in place and make sure vent is sealed . Press the MANUAL or the PRESSURE COOK button, select HIGH, and cook for 40 minutes.
  • When time is up, allow the steam pressure to naturally release for 15 minutes then manually release any remaining pressure. Unlock and remove the lid. Transfer the seasoning ham to a cutting board. Use a fork to remove the ham from the bone and stir it into the soup. Discard the bone.
  • If a creamier texture is desired, pulse the mixture with an immersion blender 3 or 4 times, just to break up some of the beans. Dont go overboard, you want lots of whole beans and a few pulses will yield a nice and creamy result. I highly recommend not skipping this step.

I think the flavor is even better the next day. It will thicken up when refrigerated so just add a little water to thin it as desired when you reheat it.

How Long Do You Pressure Cook Beans In Instant Pot

Each bean has its own pressure cooking time, and this is why I love using a 15 bean mix for my soups some beans will get overcooked and give creaminess, while other will give the soup texture. Most beans get tender in 25-35 minutes, with black beans cooking easiest and cannellini beans being more stubborn . When cooking beans I like to let the pot release the pressure naturally rather than quick release, leaving the beans more time to cook.
